When I first heard Alaena Haber from Grazed and Enthused, and Sarah Ballantyne from The Paleo Mom, were working on a cookbook together, I knew I was in for a real treat. I actually met both of these talented ladies at the same time, for Sarah’s book signing in Chicago. It seems only natural that these two would collaborate to create this amazing AIP paleo resource, The Healing Kitchen, for all of us in the autoimmune community.
With The Healing Kitchen, you get so much more than just another cookbook. As you know after reading The Paleo Approach, Sarah likes to delve into the science behind autoimmunity and inflammation. So, in The Healing Kitchen, you not only get delicious recipes, you get a useful reference for healing your autoimmune disease. These two ladies cover everything you need to create a healing kitchen, in your own home. If you need help with what to eat, you’re covered. Need help with grocery shopping, you’re covered. Meal planning your downfall, you’re covered. Not sure how to save time and money eating paleo, you’re covered. It’s all right here in The Healing Kitchen.
After receiving my review copy of The Healing Kitchen, and giving my mail lady a big hug, I immediately started thumbing through and sticking post-its on the recipes I would cook first. The very first recipe I chose was the Grilled Chicken Souvlaki Salad with Tzatziki. Now, I would have to say that Souvlaki is one of my top ten favorite foods. And, this recipe did not disappoint. It was so delicious, I didn’t even miss the pita I used to eat my Souvlaki with. But, the Tzatziki was, well….lack of a better way to describe it….the bomb! I seriously am going to put this sauce on everything. In fact, I put some on my dinner that night; and, I had some with dinner the next night!
Next, I cooked the Bacon-Date Crusted Salmon and Garlic-Rubbed Tostones, for dinner. Oh…My….Yumminess! The Bacon-Date Crusted Salmon was beyond amazing. The flavors, together with the tostones, were pure perfection. I had a little bit of sweet, and a little bit of salty smokiness, with every bite. Plus, I used the Tzatziki sauce I’d made the day before, to dip my Tostones into. AWESOME!
Then, for breakfast the next morning, I made the Chicken Hash Brown Patties. Not only were these incredibly easy to make, but they were such a tasty treat. These are the perfect macro combo to fuel me through my morning workouts!
What impressed me the most was the use of accessible foods throughout The Healing Kitchen. I hate when I buy a cookbook that calls for a lot of hard to find ingredients. Fact is, I had everything I needed, already in my kitchen, for each of these recipes. And, since all the recipes are AIP, I knew I’d be able to tolerate all of the ingredients. That’s a win in my book!
