Last week, I received The Autoimmune Paleo Cookbook in the mail.

First, I’d like to start by saying I own a lot of cookbooks. Most of my newer ones are paleo and AIP. But, I own many that are Cajun, Italian, vegetarian, French, and everything in between. I have so many, I started calling myself a collector so people wouldn’t look at me so weirdly when I showed them my collection. Now that I’m actually a food blogger, I don’t worry about showing off my collection. It’s research!

The Autoimmune Paleo Cookbook by Mickey Trescott is my absolute favorite AIP paleo cookbook. In fact, after cooking up a few dishes from the cookbook, I’ve determined it is one of my favorite cookbooks I own.

Mickey Trescott features dishes in The Autoimmune Paleo Cookbook that I like to eat. In most cookbooks, I’ll find maybe two or three recipes I want to make. Once in a while, I get lucky and find a cookbook I use all the time. With this cookbook, I got lucky.

I jumped right in and made 5 of the dishes over two days time. On Saturday, I made Mushroom-Stuffed Cornish Hens and Cinnamon-Ginger Baked Pears. The Mushroom-Stuffed Cornish Hens were exceptionally flavorful. I ate an entire cornish hen at dinner. It was fantastic! And, the Cinnamon-Ginger Baked Pears were perfection. If you’re looking for a quick and easy dessert, this is the recipe for you. I ate half of the pears on Saturday night. On Sunday morning, I put the leftover pears on top of a stack of AIP pancakes, drizzled on some maple syrup, and devoured them all. It was almost too delicious for words.

Back in the kitchen on Sunday, I whipped up Lamb Meatballs with Garlic and Spinach, Chicken Liver with Raw Garlic and Thyme, and Sage-Braised Chicken Legs, all from The Autoimmune Paleo Cookbook. Lunch that day was a little bite of this, a small bit of that, and a taste of the other. Everything was so savory and delicious! I wish I could send smells through this blog. The aroma in my kitchen was intoxicating.

Each dish from The Autoimmune Paleo Cookbook is filled with the finest selection of herbs and spices. You wont find bland, boring food in this cookbook. That’s probably what makes it my favorite AIP paleo cookbook. I grew up eating flavorful, herb and spice filled foods. I mean, I’m Cajun, for pete’s sake. This cookbook did not let me down in the flavor department.

The Autoimmune Paleo Cookbook includes more than just recipes. Mickey Trescott has provided a full 4 week meal plan with grocery list, tips on reintroducing foods on the AIP, and batch cooking ideas. She also gives you recipes for AIP paleo gut healing foods and drinks such as Kombucha, Water Kefir, coconut milk, and more. It’s a cookbook you can go to again and again for all your AIP paleo needs.

  3. Hi, Tara. I am a Cajun Lady myself currently working & residing in the Houma/Thibodaux area. I have been battling SLE with kidney involvement for the past 8 years. I finished chemotherapy a few months ago, and while it has stabilized the kidneys issue at the present, my body pain & loss of strength has been worse than ever. I’ve tried grain free in the past, but I think I need AIP. Desperately trying to treat the root of the problem and not taken anymore medications than necessary. I’ve purchased the Paleo Approach book, and would love more options for recipes. I enjoy your videos & have gained some valuable information.

    1. Hi Dawn! I love Houma. I used to shop at Southland Mall all the time. I’m so glad you found me. Sounds like AIP is definitely the way to go. Make sure you check out my Pinterest board, AIP Paleo. I have tons of free AIP recipes on it. Lupus used to attack my kidneys all the time. Since starting AIP, I’ve had far less kidney attacks. When I do get one, I’m able to knock out the inflammation within a couple of days. I still a work in progress. But, the improvement in my symptoms has been amazing.   8. Hey mo! I would LOVE to win mickey’s book. I was diagnosed with RA at 17 and ever since I have Ben on a journey toward optimizing my health. I went from gluten free first then added on dairy free to soyfree to cornfree I was practically paleo without knowing it I then started paleo lost tons of weight, but still my ra persisted, I’m now about 5 months in strict aip paleo, still working toward healing my leaky gut and ra. I would love some new recipes! I started following you on instagram too.

I was able to heal my leaky gut, which included an ulcer in my stomach and pockets of inflammation throughout my colon, completely. I wish you lots of luck. I am trying to heal my graves disease and so far it has helped. Since I had a stroke caused from a massive clot in my brain I have struggled with autoimmune diseases for a few years now and this is the first thing that has truly helped! I have a four year old daughter and the last year has been a huge struggle to be the mom I once was.
