Last week, I received The Autoimmune Paleo Cookbook in the mail.

First, I’d like to start by saying I own a lot of cookbooks. Most of my newer ones are paleo and AIP. But, I own many that are Cajun, Italian, vegetarian, French, and everything in between. I have so many, I started calling myself a collector so people wouldn’t look at me so weirdly when I showed them my collection. Now that I’m actually a food blogger, I don’t worry about showing off my collection. It’s research!
The Autoimmune Paleo Cookbook by Mickey Trescott is my absolute favorite AIP paleo cookbook. In fact, after cooking up a few dishes from the cookbook, I’ve determined it is one of my favorite cookbooks I own.
Mickey Trescott features dishes in The Autoimmune Paleo Cookbook that I like to eat. In most cookbooks, I’ll find maybe two or three recipes I want to make. Once in a while, I get lucky and find a cookbook I use all the time. With this cookbook, I got lucky.
I jumped right in and made 5 of the dishes over two days time. On Saturday, I made Mushroom-Stuffed Cornish Hens and Cinnamon-Ginger Baked Pears. The Mushroom-Stuffed Cornish Hens were exceptionally flavorful. I ate an entire cornish hen at dinner. It was fantastic! And, the Cinnamon-Ginger Baked Pears were perfection. If you’re looking for a quick and easy dessert, this is the recipe for you. I ate half of the pears on Saturday night. On Sunday morning, I put the leftover pears on top of a stack of AIP pancakes, drizzled on some maple syrup, and devoured them all. It was almost too delicious for words.


Back in the kitchen on Sunday, I whipped up Lamb Meatballs with Garlic and Spinach, Chicken Liver with Raw Garlic and Thyme, and Sage-Braised Chicken Legs, all from The Autoimmune Paleo Cookbook. Lunch that day was a little bite of this, a small bit of that, and a taste of the other. Everything was so savory and delicious! I wish I could send smells through this blog. The aroma in my kitchen was intoxicating.



Each dish from The Autoimmune Paleo Cookbook is filled with the finest selection of herbs and spices. You wont find bland, boring food in this cookbook. That’s probably what makes it my favorite AIP paleo cookbook. I grew up eating flavorful, herb and spice filled foods. I mean, I’m Cajun, for pete’s sake. This cookbook did not let me down in the flavor department.
The Autoimmune Paleo Cookbook includes more than just recipes. Mickey Trescott has provided a full 4 week meal plan with grocery list, tips on reintroducing foods on the AIP, and batch cooking ideas. She also gives you recipes for AIP paleo gut healing foods and drinks such as Kombucha, Water Kefir, coconut milk, and more. It’s a cookbook you can go to again and again for all your AIP paleo needs.
