I know many of you, like me, bought an Instant Pot on Amazon, when it’ was on flash sale. I have been using mine every day since. I’ve made my own coconut yogurt, steamed veggies, cooked entire meals, and seared meats in my new Instant Pot. In fact, I created this amazing recipe, Sweet & Sour Mango Chicken Thighs, especially for cooking in my Instant Pot. Every step, from searing the chicken thighs, to thickening the sauce, was done in under an hour! I love my new Instant Pot!
Well, my week guest hosting the Autoimmune Paleo Instagram page is over. I had a lot of fun; but it was very time consuming. While I was guest hosting, I posted a photo of my Baked Apples with Maple Cinnamon Ice Cream. Followers went nuts over it, and asked me to post the recipe. This is something I’ve made for my hubby and myself for a while; so, I never thought anyone would want it as a recipe. Sometimes, we think the simple dishes we create are not recipe worthy. This has given me a whole new perspective on posting recipes. I will now include simple recipes in my postings. Plus, this is a treat recipe, which I hardly ever post. It’s a win-win! Today, I want to talk to you about a very serious topic, your emotional wellbeing on The Autoimmune Protocol (AIP). It can be very difficult to find emotional balance on the autoimmune protocol. How are you feeling emotionally? Are you feeling discouraged? Do you feel stressed by the thought of reintroducing foods? Have you started to question your healing journey?
There is no doubt about it, the AIP can be very difficult. For some of us, the elimination phase can seem to go on forever.
