Well, it’s seems it’s time to dust off my slow cooker, and put it to good use again. Since getting my Instant Pot, I really haven’t used my slow cooker very often. Cooking foods in half the time has become both necessary and more attractive to me. But, to really get the most out of my batch cooking sessions, I’m bringing my slow cooker back into service.

One of my favorite foods to cook in my slow cooker is short ribs. I mean, who doesn’t love short ribs? They’re inexpensive, easy to eat and mighty tasty. When I found some beautiful fresh plums at my local health food grocer, I immediately knew I wanted to create a sweet dish with short ribs. These short ribs in plum sauce are tangy and sweet. Cooked in your slow cooker, these short ribs will be falling off the bones tender. You could serve this dish over cauliflower rice, kelp noodles, yam noodles or zoodles.
Ingredients
- 1 tablespoon coconut oil
- 3 pounds beef short ribs
- 5 plums, pitted and chopped
- 2 cups organic beef broth
- 2 tablespoon raw honey
- 1/3 cup coconut aminos
- 1 small piece fresh ginger, peeled and diced
- 1 tablespoon crushed garlic
- 1/8 teaspoon salt
- 1/2 onion, sliced thin
- 4 ounces large mushrooms, sliced
- 1 tablespoon arrowroot starch
Instructions
- Brown short ribs, on all sides, in large pan or skillet.
- While short ribs are browning, place all ingredients, except mushrooms and arrowroot starch, in slow cooker
- Mix well.
- When all short ribs have been browned, add them to slow cooker, nestling them into other ingredients.
- Set slow cooker on low and cook for 4 hours.
- After 4 hours, add mushrooms and arrowroot starch to crockpot.
- Be sure to whisk in arrowroot starch to prevent lumps.
- Continue cooking, on low, for 1 more hour.
- Serve short ribs with sauce and vegetables on top.
