As promised, below is the recipe for my Paleo Coconut Pecan Bread Pudding!  I made this particular recipe using Mikey’s Muffins, Cinnamon Raisin flavor.  The flavor was spectacular using these muffins.  You could also use the Original flavor muffins, or your favorite paleo bread recipe.  I did like the cinnamon flavor the muffins added to the recipe.  Yes, I did take one bite.  Although my taste tester approved, I had to check it out for myself.  I’ll definitely be freezing some for after The 21-Day Sugar Detoxbread pudding Day 10 of The 21-Day Sugar Detox & Paleo Coconut Pecan Bread Pudding Recipe ir t boanmo05 20 l as2 o 1 a 1936608111.

Preheat oven to 350 degrees F. Place muffins or bread slices in a 9X13-inch baking pan. Scald light coconut milk with ghee or butter. Pour over bread and set aside to soak. Beat 5 egg yolks and 1 egg white in a medium bowl. Add coconut sugar and beat until mixed well. Slowly, add full-fat coconut milk, then vanilla extract. Pour over bread mixture and mix thoroughly. Add coconut flakes and pecans, mix. Bake at 350 degrees F. for 50 to 60 minutes. Remove from oven and set aside. Raise oven temperature to 375 degrees F. Beat egg whites in medium bowl until soft peaks form. Add Stevia or sugar gradually. Add Pure Vanilla extract. Continue to beat until stiff peaks form. Spread mixture over pudding. Sprinkle with flaked coconut and pecans to garnish. Bake at 375 degrees F. for 5 to 7 minutes until meringue turns golden brown. Serve warm. Or, if you’re like me, refrigerate and eat cold.
Serves: 10 to 12

Extra tip:  Be sure your coconut milk is scalding hot when you pour it over your muffins or bread.  Do not let it get cool before adding egg yolk mixture.  If you do, your pudding will not form properly.

For lunch, I scrambled the leftover egg yolks from the bread pudding with mushrooms, red onions, spinach, and garlic. Yummy!

Dinner was a paleo version of one of my Cajun favorites, Chicken Fricassee.  I’ll be sharing that recipe with you tomorrow.  I even made a detox approved roux!  I served it with a side of Smothered Collard Greens.  That recipe is coming later this week.  It’s so great to know I can create paleo food that tastes like the food I grew up eating.

As many of you know, after reading my post chronicling my first day at the GFAF Expo, I had a difficult time finding paleo friendly foods to sample. The only vendor booth to provide me with any nourishment was the Tallgrass beef Company. I was extremely grateful for the juicy, flavorful slices of grass fed, grass finished hot dog franks they provided. Now, it wasn’t just because I was starving that I frequented their booth. Their story intrigued me. The taste kept me going back for more.

Tallgrass beef Company was founded by Bill Kurtis (yes, the Bill Kurtis). You probably know him as an accomplished journalist, and for his voice. Did you know he is also a rancher and conservationist? Well, he is. He founded Tallgrass beef to bring the highest quality, grass fed beef home to you and your family. What better way to introduce families to healthy, nutrient rich, grass fed beef than to make it into a hot dog frank?
Most hot dog franks are filled with preservatives, animal pieces/parts of unknown origin, fillers, and artificial coloring. Even some grass fed beef franks include the ingredient carrageenan. In case you’ve never heard of it, Carrageenan is a known gut irritant. It is actually used in some lab testing to induce vomiting in test subjects. Yea, I really don’t want that in my hot dog frank.
Tallgrass beef franks contain no growth hormones or antibiotics. Because their beef is grass finished, they contain no gluten and NO GMOs. They contain no preservatives, nitrites or nitrates. Plus, their cattle are raised humanely, in the USA.
I guess the mustard on the hotdog for me was the fact that their beef was grass finished. Those of us who eat a paleo diet know the importance of grass finished beef. When cattle are grass finished, we don’t have to worry about our diets being contaminated by soy, corn, or other grains used in feeding. We can rest comfortably, knowing we are getting the most nutrient dense product for our money.
Now, I know all this information is great and everything; but, the taste is what kept me running back to the booth for more. Tallgrass beef hot dog franks were the plumpest, tastiest, grass fed franks I’ve ever tasted. For you fellow foodies out there, the bite and chew was nice and firm. I think the ratio of spices is perfect. You get the full flavor of the grass fed beef in every bite. It’s quite delightful.
So, what does Paleo Cajun Lady do when she finds an ingredient she likes? She creates recipes, using that ingredient. I have created three distinct recipes utilizing Tallgrass beef franks as the main ingredient. The first is a Cajun classic, Paleo Cajun Lady’s Weenie Spaghetti. It’s a flavorful sauce that combines the meatiness of the franks, the acidity of tomatoes, and the saltiness of green olives. I know it sounds like a weird combination; but, I assure you, it’s delicious.

Paleo Cajun Lady’s Weenie Spaghetti

                              Paleo Cajun Lady’s Weenie Spaghetti
1 Tbs. Bacon Grease, Coconut Oil, or ghee

3 Tbs. Fresh Parsley

1 Package Tallgrass beef franks (.75 lb), sliced

1 Medium Onion, chopped

1 Carrot, chopped

1 Stalk Celery, chopped

2 Cloves Garlic, crushed

3 Tbs. Fresh Basil, chopped

1 Tbs. Dried Oregano

1 Jar Green Olives, sliced

2 Cans/Jars Tomato Sauce (15 oz. each)

1 Tbs. Raw, Organic Honey

Salt & Pepper, to taste

Hot Sauce, to taste
Heat fat or oil in large Enameled Dutch Oven until melted. Add Tallgrall beef franks and brown. When franks are browned, remove and set aside. Add onion, carrot and celery and cook until wilted and slightly brown. Add garlic and browned franks. Continue to cook for 2 minutes, stirring constantly, to keep from burning. Add tomato sauce, parsley, basil, oregano, and green olives. Lower heat. Simmer, slowly for 2 hours, stirring occasionally. Add honey, salt and pepper. Simmer for 30 minutes. Remove from heat. Serve over your favorite paleo noodles. Add hot sauce to taste.

                                        Baked Spaghetti Squash
Preheat oven to 375 degrees F. Split squash in half, lengthwise. Scoop out pulp and seeds. Place squash, rind side up, on baking sheet. Sprinkle a small amount of water (about 3 Tbs. in total) on either side and between the two sides of squash. Bake for 40 minutes. Remove from oven and flip squash over to cool. Once cool enough to handle, slide fork tines over squash, in a continuous top to bottom motion, to create noodles. Discard rind.
I’ll release the other two recipes in later posts. I think you’ll enjoy the diversity each dish offers. Of course, you could use the franks to make your favorite hot dogs. But, a girl can’t live on hot dogs alone. Now, you can turn these delicious Tallgrass beef franks into different meals your family will enjoy.
