Paleo Roast Beef Po-Boy Recipe

I decided to do two blog posts for you today.  As soon as I made my roast beef po-boy for lunch, I knew I had to share it with you.  It was so good, I could have eaten two more of them!  But, I didn’t….only because I was out of roast beef.

Roast Beef with Red Onion Gravy Po-Boy

1tablespoon Organic Extra Virgin Olive Oil

¼ red onion, sliced thin

3 slices Roast beef (I like Applegate)

½ cup Beef Broth, Organic

1 tablespoon Arrowroot Starch Flour ( If your diet doesn’t allow arrowroot powder, you may use coconut or tapioca flour instead. Just be sure to fully dissolve in broth and whisk like crazy)

Salt, to taste

2 Romaine lettuce leaves

1 tablespoon paleo Organic Mayo

Hot Sauce, to taste (optional)

Heat oil in skillet over medium/low heat.  Once oil is hot, add red onion to skillet and cook until lightly browned.  Add roast beef to skillet, stir.  Add beef broth, arrowroot powder, and salt; stir or whisk.  When gravy thickens, remove from heat.  Place roast beef onto one lettuce leaf; pour gravy on top. Dollop mayo on top.  You can also top with avocado, pickles, or anything else that makes you happy.  Add hot sauce.  Place second lettuce leaf on top.  Makes 1 po-boy.

Special tips:  You can use extra lettuce leaves to make your po-boy stronger.  And, grab a lot of napkins, cause this is one messy meal!  Enjoy!

Day 11 of The 21-Day Sugar Detox

Wow! I can’t believe I’m over halfway done with The 21-Day Sugar Detox.  It’s gone by so quickly.  I’ve had so much going on, I haven’t even had time to realize how I’m feeling.

The detox has certainly given me extra energy.  I also feel as though my hormones are better regulated.  I haven’t been as moody over the last week and a half.  Unfortunately, my skin rashes have not improved.  There could be a few reasons for this. My stress levels have been really high as of late.  Also, the trees and bushes are flowering, causing allergies.  And, of course, it could just be an effect of my body detoxing.  I’m just keeping an eye on it.  Hopefully, they’ll improve over the next few days.

If you’re on The 21-Day Sugar Detox, Whole30, or another detox, I would like to know some of your experiences.  I would especially like to hear from those of you with autoimmune diseases.  What have your experiences been?  Are you noticing an uptick in any symptoms? What did I eat on day 11 of The 21-Day Sugar Detox?

At lunch, I made this incredibly tasty Tuna Broccoli Slaw.  It is now one of my favorite lunches.  I served it alongside a cup of delicious beef bone broth.

Paleo Tuna Broccoli Slaw

½ bag Broccoli Slaw ( I like Trader Joe’s. It’s Organic.)

1 can wild caught Tuna in Extra Virgin Olive Oil

½ Avocado

1 Cucumber

¼ cup chopped Pecans

2 Tbsp. paleo Mayonnaise

1 teaspoon Apple Cider Vinegar

Salt, pepper, & hot sauce, to taste

Place all ingredients in a large bowl.  Mix well.  Enjoy!

Serves 1 hungry person (ME!) or 2 not so hungry people.  To serve more, simply double recipe.

At dinner, I really wasn’t very hungry.  I’d eaten that entire bowl of slaw for lunch, after all.  I made a simple sandwich with Applegate roast beef, bacon, sauteed mushrooms, and avocado.  Then, I topped it with a fried egg, fried in bacon grease. Yum!

I hope you’re getting some ideas of foods you can eat while on The 21-Day Sugar Detox.  Any leftovers can be refrigerated or frozen.  Sometimes, I’ll make big batches of foods and freeze them for the following week.  This way, I don’t have to make a complete meal every night.  That’ll save you time and effort.
