AIPizza Crust and Instant Pot Tomato-less Sauce Recipes

So, this week’s recipes are the result of me watching my hubby dig into yet another pizza pie, whilst I sit glaring at him from across the table.  It was time for me to head to the kitchen to create a delicious AIP pizza crust and sauce.  I tinkered and tested until I came out with this tasty AIP version, AIPizza Crust and Instant Pot Tomato-less Sauce!  Now, I could enjoy a healthy pizza with my hubby, who actually named it AIPizza!  I think you’re going to love it too.

Now, I have a few tips for you, before you begin to make AIPizza Crust and Instant Pot Tomato-less Sauce.  First, make sure your plantains are really green.  If they’re even a little ripe, your crust will taste too sweet.  Second, if you don’t have an Instant Pot, I’ve added the recipe to make the sauce in a saucepan; so, you’re covered.  I will tell you that the sauce will come out a little thinner.  Third, you’re going to want to put some AIP cheese on your pizza.  You can get the recipe for Hayley’s Zucchini Cheese here. It’s go time y’all! You can add whatever AIP compliant  or Reintroduction Phase toppings you want to your AIPizza.  Have fun!

AIPizza Crust and Instant Pot Tomato-less Sauce Recipes

Prep Time: 15 minutes

Cook Time: 28 minutes

Total Time: 43 minutes

Yield: Crust: One 12" pizza Sauce: Two 12" pizzas

Cooking Utensils: Food processor, Immersion blender or high powered blender, pizza stone or baking pan, parchment paper, Instant Pot or medium saucepan

Ingredients

Instructions

  1. Crust
  2. Preheat oven to 400° F.
  3. Process plantains in food processor until smooth.
  4. Add tapioca flour to plantains.
  5. Process for 30 seconds.
  6. Add coconut flour, baking soda and half of palm shortening to plantain mixture.
  7. Process for 30 seconds.
  8. Add the rest of ingredients, except other half of palm shortening, to plantain mixture.
  9. Process for another 30 seconds, or until dough forms.
  10. Remove pizza dough from processor and form into a large ball in your hands.
  11. Place dough ball on parchment lined pizza stone or baking pan.
  12. Press into dough, with your hands, spreading it outward, until you have desired pizza shape.
  13. Brush remainder of palm shortening over pizza crust.
  14. Place in oven and bake for 10 minutes.
  15. Remove from oven, top with your favorite toppings.
  16. Put back in oven and bake for 10 to 12 minutes.
  17. Sauce
  18. Place all ingredients in Instant Pot
  19. Press Manual and set for 6 minutes cook time.
  20. Hit Pressure button to set on high pressure.
  21. Once cooking is done, turn off Instant Pot.
  22. Release pressure by sliding pressure release to Venting.
  23. Open lid carefully.
  24. Use immersion blender, or process in high speed blender or food processor until a thick sauce forms. Spoon onto pizza crust.
  25. No Instant Pot, no problem! Add all ingredients to medium saucepan with a 1/2 cup water or bone broth. Cook over medium/low heat until beets and onions are soft, about 30 to 40 minutes. Then, follow instructions for processing. Sauce may come out a bit thinner than Instant Pot method.

Notes

Extra Tips: For a crispier crust, make sure your dough is really thin on your pizza stone or pan. Also, add 1 to 2 minutes to pre-bake time.

For those of you that have not bought an Instant Pot yet, let me tell you, this pot is magical!  I use mine almost every day.  I also cook, on average three dishes or ingredients on the days I use it.  You can sauté, pressure cook, slow cook, steam, make rice, yogurt, and so on, in it.  I can’t say enough wonderful things about it.  I love my Instant Pot!
