So, this week’s recipes are the result of me watching my hubby dig into yet another pizza pie, whilst I sit glaring at him from across the table. It was time for me to head to the kitchen to create a delicious AIP pizza crust and sauce. I tinkered and tested until I came out with this tasty AIP version, AIPizza Crust and Instant Pot Tomato-less Sauce! Now, I could enjoy a healthy pizza with my hubby, who actually named it AIPizza! I think you’re going to love it too.
Now, I have a few tips for you, before you begin to make AIPizza Crust and Instant Pot Tomato-less Sauce. First, make sure your plantains are really green. If they’re even a little ripe, your crust will taste too sweet. Second, if you don’t have an Instant Pot, I’ve added the recipe to make the sauce in a saucepan; so, you’re covered. I will tell you that the sauce will come out a little thinner. Third, you’re going to want to put some AIP cheese on your pizza. You can get the recipe for Hayley’s Zucchini Cheesehere. It’s go time y’all! You can add whatever AIP compliant or Reintroduction Phase toppings you want to your AIPizza. Have fun!
Release pressure by sliding pressure release to Venting.
Open lid carefully.
Use immersion blender, or process in high speed blender or food processor until a thick sauce forms. Spoon onto pizza crust.
No Instant Pot, no problem! Add all ingredients to medium saucepan with a 1/2 cup water or bone broth. Cook over medium/low heat until beets and onions are soft, about 30 to 40 minutes. Then, follow instructions for processing. Sauce may come out a bit thinner than Instant Pot method.
For a crispier crust, make sure your dough is really thin on your pizza stone or pan. Also, add 1 to 2 minutes to pre-bake time.
For those of you that have not bought an Instant Pot yet, let me tell you, this pot is magical! I use mine almost every day. I also cook, on average three dishes or ingredients on the days I use it. You can sauté, pressure cook, slow cook, steam, make rice, yogurt, and so on, in it. I can’t say enough wonderful things about it. I love my Instant Pot!
