Paleo White Chocolate Strawberry Bread Pudding Recipe

Today I have a real treat for you.  I made this white chocolate strawberry bread pudding for my 45th birthday on Wednesday.  The best part is that it’s made with all paleo ingredients.

Remember, I don’t create many dessert recipes.  These are only to be enjoyed once in awhile, as a treat.  This recipe has a lot of sugar in it.  Even though it’s coconut sugar and honey, it’s still sugar. That being said, enjoy.

White Chocolate Strawberry Bread Pudding Recipe

Prep Time: 6 hours

Cook Time: 2 hours

Total Time: 8 hours

Yield: 8-10 servings

Ingredients

Instructions

  1. Make strawberry filling first by combining sugar and sliced strawberries in bowl. Press sugar into strawberries. Place in fridge for at least 20 minutes.
  2. In large mixing bowl, whisk together eggs and egg yolks. Set aside.
  3. In large saucepan, combine all coconut milk and sugar.
  4. Bring mixture to a low simmer and add white chocolate. Whisk until chocolate is melted.
  5. Remove pan from heat and quickly stir in whisked eggs. Continue stirring to keep eggs from scrambling.
  6. In a 9”X13” baking dish, place bread slices in one layer. Top with strawberry filling. Cover with another layer of bread slices.
  7. Pour half of coconut milk mixture over bread slices. Gently press bread slices to ensure mixture is absorbed by bread.
  8. When most of mixture has been absorbed, pour remaining mixture over bread. Gently press.
  9. Cover dish with parchment paper, then foil.
  10. Let soak for 5 hours in fridge.
  11. After 5 hours, remove baking dish from fridge and set aside while oven preheats.
  12. Preheat oven to 300 degrees F.
  13. Bake covered for 1 hour on middle rack.
  14. Remove foil. Bake for another 45 minutes or until top is golden brown.
  15. Create sauce to pour on top of each serving by combining melted white chocolate and full fat coconut milk in a double boiler.
  16. Serve individual portions with sauce ladled on top. You can also garnish with a strawberry and whipped cream made with a can of full fat coconut milk, 5 or 6 drops liquid stevia, and 1 teaspoon pure vanilla extract.
  17. Preparation time: Forever! It actually takes about 8 hours, start to finish.
  18. Can be refrigerated and reheated.

 ** Note: I’ve provided a link for the recipe I used to make my white chocolate.  If you choose to use this recipe, leave out the orange zest and cranberries.  Follow the same instructions without those two ingredients.**

I was sitting here, editing photos for my first cookbook, when I realized I hadn’t posted results from The 21-Day Sugar Detoxdetox Paleo Life After The 21-Day Sugar Detox ir t boanmo05 20 l as2 o 1 a 1936608111.  Apparently, the days fly by when working on a project, like this cookbook.

I only lost one pound during this detox; but, I wasn’t trying to lose any weight.  In fact, I upped my fat intake this time, to ensure I wouldn’t lose.  As you can see, it’s hard not to lose some weight doing The 21-Day Sugar Detoxdetox Paleo Life After The 21-Day Sugar Detox ir t boanmo05 20 l as2 o 1 a 1936608111.  You really have to try not to.

Since ending the detox, I’ve enjoyed a couple of cheat meals.  For me, cheat meals mean I go gluten free, instead of strict paleo.  Of course, I don’t eat any of the foods to which I’m allergic or can’t tolerate.

On Memorial Day, my husband and I ate at On the Border Mexican restaurant.  They actually have a pretty awesome allergen free menu.  If you look it up online, you can find dishes that are dairy free, corn free, tree nut free, and gluten/wheat free.  There was even a gluten free dessert, Flan, that was pretty tasty.  I ordered the Grilled Chicken and vegetables with Cilantro Lime rice.  The chicken was really good.  I ate a few bites of rice, without the corn  ( I’m not sure about their GMO policies).  I also did not eat the grilled peppers (nightshades).  It was really nice to be able to eat at a restaurant.

That night, I savored my gluten free Omission beer.  Ooh, did that taste great!  I don’t drink very often; but, when I do, I truly appreciate it.

And, I ate a hunk of my Coconut Pecan Bread Pudding.  I guess you could say, I really relished my first day off the detox diet.

Lately, I’ve noticed so many of the people I learned from, when I first went paleo, eating foods that are not traditionally paleo.  At first, I was a little taken aback by this.  However, the more I thought about it, the more I questioned my own rigidity on the paleo diet.  Was it me that was striving too much for perfection?  Well, since I do tend to be a perfectionist, I came to the conclusion that I was being too rigid.  The whole point of eating the paleo way is to bring us closer to foods in their natural state, to eat whole foods.  As the paleo diet evolves, we begin to add more foods to our diet.  Some have added rice or potatoes to their diets for extra carbs.  Others have added baking soda or powder to their baked goods.  Those foods are typically considered paleo friendly.  I will continue to evolve as well.  If I choose to have a little jasmine rice with my meal, I will.  Any diet that becomes too restrictive is not sustainable.  I will not judge you if you aren’t 100% paleo; because, neither am I.
