As Fall weather starts moving it’s way into Illinois, I thought it was time to start creating some new, hearty soup recipes.  Of course, I pulled my trusty Instant Pot into service!  This AIP Instant Pot Balsamic Beef & Cabbage Soup was the first creation.  The flavor is so comforting and delicious. Because the stew meat is marinated before cooking, it comes out so tender and full of flavor.

AIP Instant Pot Balsamic Beef & Cabbage Soup

AIP Instant Pot Balsamic Beef & Cabbage Soup Recipe

Prep Time: 40 minutes

Cook Time: 40 minutes

Total Time: 1 hour, 20 minutes

Yield: 6 servings

Ingredients

  • 1 pound grass fed beef stew meat
  • 1/2 cup balsamic vinegar
  • 1/2 cup olive oil
  • 1 clove garlic, chopped
  • 1 tablespoon rosemary
  • 1 white sweet potato, cut into 1” chunks
  • 3 cups shredded cabbage
  • 2 carrots, sliced
  • 1 cup sliced mushrooms
  • 1 red onion, chopped
  • 1 zucchini, sliced
  • 2 tablespoons dried basil
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • 4 cups beef broth
  • 2 cups filtered water

Instructions

  1. Place first five (5) ingredients into large bowl or gallon resealable plastic bag.
  2. Mix well and place in fridge to marinate for 30 minutes.
  3. Once done marinating, remove from fridge.
  4. Press “Saute” button on Instant Pot.
  5. Add stew meat and marinade to Instant Pot.
  6. Cook, stirring often, for 10 minutes.
  7. Press “Keep Warm/Cancel” button on Instant Pot.
  8. Add all other ingredients to Instant Pot.
  9. Close lid.
  10. Press “Soup” button.
  11. Allow to cook for 30 minutes.
  12. When done cooking, press “Keep Warm/Cancel” button.
  13. Allow to release pressure naturally for 10 minutes.
  14. Carefully, open lid, venting beforehand, if needed.
  15. Serve.

I know I don’t typically give you two recipes in one week.  But, I’m sitting on a truckload of recipes right now.  Rather than continue to sit on them, I decide to post an extra one this week.  Boy, is it a good one.  There is a reason I named them “Ghee These Wings Are Tasty”!  I may be prejudiced; but, they are the best chicken wings I have ever tasted.

The original recipe does call for some level one reintroductions, and the reintroduction of ghee.  However, I have made modifications for those of you who are on elimination phase AIP, and those who are dairy free.  I’ve had them both ways.  They’re both delicious!

These “Ghee These Wings Are Tasty” chicken wings are gluten free, grain free, nut free, and nightshade free.  It’s not easy to find a good chicken wing recipe that has no nightshades.  Believe me, I’ve searched high and low.  Plus, this wing recipe is coated, just the way I love them.

Prep Time: 20 minutes

Cook Time: 40 minutes

Total Time: 1 hour

Yield: 2 to 3 servings

Ingredients

Instructions

  1. Preheat oven to 400°F.
  2. Place coating ingredients and chicken wings into large bowl or resealable plastic bag.
  3. Mix, coating wings well.
  4. Lay coated wings on large baking sheet pan, lined with parchment paper.
  5. Drizzle melted cooking fat over wings.
  6. Place in oven and bake for 30 minutes.
  7. Flip wings over, and bake for another 10 minutes.
  8. During the last 10 minutes, make sauce by melting ghee over low heat.
  9. Once melted, add garlic and continue to heat for 10 minutes, over low heat.
  10. Remove wings from oven and place in large bowl.
  11. Pour hot sauce over wings and toss lightly.
  12. Plate wings.
  13. Pour extra sauce, from bottom of bowl, over wings.
  14. Serve.

It’s hard to believe it’s been six months since I released my first e-cookbook, AIP Paleo Cajun Cookbook.  I’m so thrilled every time I see one of you post the dishes you’ve cooked, using my recipes. I set out to prove you could have flavorful, delicious foods, even on the AIP.  With my cookbook, and the recipes on my blog, I think I’ve accomplished that.

Fried Okra in Red Palm Oil is one of my favorite recipes in AIP Paleo Cajun Cookbook.  To celebrate my six month anniversary of it’s release, I would love to share the recipe with y’all. If you’ve never tried okra before, this recipe is a great way to try it for the first time.

Prep Time: 15 minutes

Cook Time: 10 minutes

Total Time: 25 minutes

Yield: 2 to 4 servings

Ingredients

Instructions

  1. Place first 4 ingredients into large bowl or resealable bag.
  2. Mix well, coating okra with dry ingredients.
  3. Set in fridge for 10 minutes.
  4. Heat red palm oil in large fry pan, over medium heat.
  5. Once oil is hot, drop in coated okra.
  6. Stir to keep from burning. You may have to cook in two batches.
  7. Fry for about 5 minutes per batch, or until okra is lightly browned.
  8. Remove from oil and place on paper towels to drain.
  9. Serve immediately.

Notes

Be sure to serve immediately. Does not store well.
