Yay, I made it! So, for all the stress I went through to get there, Paleo F(x) in Austin, TX, was totally worth it! I had the most wonderful time while there. It was so exciting to see everyone, and meet some new friends. I couldn’t have wished for a better trip! Paleo F(x) 2015 was AWESOME!

I love one skillet meals! If you’re looking to save some time in the kitchen, one skillet meals are the answer. This Mushroom Artichoke Chicken Skillet is quick, easy and oh so delicious.
AIP Mushroom Artichoke Chicken Skillet
Usually, I try to prep some veggies for the week on Tuesdays. I’ll chop some kale, carrots, apples, mushrooms, onions, celery, and whatever else I plan to use that week. I also keep some chopped veggies in the freezer. That way, I can easily pull them out when I’m ready to cook a meal. Preparation is key when your on the autoimmune protocol (AIP).
With my pre-chopped and frozen veggies, I was able to whip up this Mushroom Artichoke Chicken Skillet in no time. Hope you enjoy it!
