Hmm, so how long has it been since I’ve had real tomato sauce chili? Um, about three years ago!  Despite chili being one of my favorite foods, I didn’t jump right into cooking up a big pot of it for me to enjoy. After almost two years of being on the AIP, I’ve taken my reintroduction of nightshades very slowly.  The fact that chili usually contains lots of different nightshades, made it a complicated dish to reintroduce. In my version, I’ve decided to use only two nightshades, tomato sauce and chili powder.  I also added the reintroduction of cumin.  Lucky for me, I had no bad effects from my Easy Instant Pot Paleo Chili!

Easy Instant Pot Paleo Chili Recipe

For most people with autoimmune disease, nightshades are the hardest foods to reintroduce.  But, just to show you how different we really all are, I have been able to reintroduce most nightshades, but not black pepper.  Black pepper is a stage 1 reintroduction!  Most people can add it back into their diets with no problem.  I’ve also been able to add dairy back into my diet, but not cooked broccoli.  You see, everyone is different.  You really have to take reintroductions slowly.  One day, you may be able to enjoy chili, too!

Easy Instant Pot Paleo Chili Recipe

Prep Time: 30 minutes

Cook Time: 30 minutes

Total Time: 1 hour

Yield: 6 servings

Serving Size: about 1 cup

Ingredients

Instructions

  1. Place ground beef in inner pot of Instant Pot.
  2. Press Saute button.
  3. Brown ground beef.
  4. Add onions and garlic and cook for 5 minutes, stirring often.
  5. Press Off button.
  6. Add all other ingredients to Instant Pot.
  7. Close lid.
  8. Press Bean/Chili button.
  9. Allow to cook for pre-set time (30 minutes).
  10. When done cooking, press Off button.
  11. Let pressure release naturally for 10 minutes.
  12. Carefully, open lid.
  13. Stir.
  14. Serve.

Notes

May be frozen.

There are so many ways to serve your chili. Some of my favorite ways is on a salad with Jackson’s Honest Sweet Potato Chips, in a bowl with my Yellow Squash Cheese Sauce and guacamole on top, and on a hot dog with a baked sweet potato as the bun. Any way you choose to eat it, I think you’ll enjoy it!

If you’re anything like me, one of the foods you miss most, when you have lots of food allergies, and/or you’re on the AIP, is Chinese takeout.  I used to love eating from all those little containers, each one containing a different mix of flavors.  This recipe, Instant Pot AIP Beef with Broccoli, is my way of getting back some of that flavor, without all the allergens that can come with the takeout version. And, if you really want to make it feel like takeout, just get some of those little containers to eat it out of.

When I created this recipe, I was also doing a reintroduction of quinoa.  Since successfully reintroducing white rice, I figured quinoa was the next on the list.  To go along with my Instant Pot AIP Beef with Broccoli, I cooked my quinoa in the same style as fried rice.  Happily, my reintroduction worked out well.  If there is one message I can get across to you, it is that the AIP elimination phase is not meant to last forever.  You will be able to reintroduce foods, at the right time, and in the right way.  But, don’t rush it. I waited until I was in remission, before reintroducing foods like oatmeal, nightshades, and quinoa.  I’m not saying you have to wait that long; but, you should wait until you’re feeling good and symptom free for at least a couple of months.  Trust me, it’s better to be safe than sorry.

Instant Pot AIP Beef with Broccoli Recipe

Prep Time: 20 minutes

Cook Time: 30 minutes

Total Time: 50 minutes

Yield: 4 servings

Ingredients

  • 1 pound grass fed beef stew meat
  • 1 onion, quartered
  • 1/2 cup bone or beef broth
  • 1/4 cup coconut aminos
  • 2 tablespoons fish sauce
  • 1 large clove garlic, pressed
  • 1 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1- 10 to 12 ounce bag frozen organic broccoli

Instructions

  1. Add all ingredients, EXCEPT broccoli to inner pot of Instant Pot.
  2. Close lid.
  3. Press Meat/Stew button.
  4. Allow to cook for pre-set time.
  5. When done cooking, press Off button.
  6. Release pressure by sliding pressure valve on top to Venting.
  7. Allow to vent.
  8. Carefully open lid.
  9. Add broccoli to inner pot.
  10. Loosely place lid back on Instant Pot.
  11. Allow to sit for 15 minutes.
  12. Remove lid and stir.
  13. Serve.

Y’all are just loving the Instant Pot recipes lately.  Well, I’ve got a new one for you.  This Cabbage and Liver Meatball Soup is completely AIP paleo, healthy, and perfect for those chilly winter days and nights.  Plus, it’s a great way to get your liver in your diet.  By using chicken livers, you get a much milder liver flavor.  Mixed in with the other flavors, you won’t even know you’re eating liver!

Instant Pot AIP Paleo Cabbage and Liver Meatball Soup

Instant Pot AIP Cabbage and Liver Meatball Soup Recipe

Ingredients

  • Meatballs
  • 1/2 pound chicken livers
  • 1/2 pound ground beef
  • 2 tablespoons Otto’s Naturals Cassava Flour
  • 2 cloves garlic, minced
  • 1 tablespoon each basil, oregano and rosemary
  • 1/8 teaspoon sea salt
  • Soup
  • 1 small head cabbage, chopped
  • 2 carrots, sliced
  • 2 cloves garlic, sliced
  • 2 parsnips, spiralized (If you don’t have a spiralizer, just slice)
  • 4 cups plus bone broth or chicken broth
  • 1 tablespoon basil
  • salt, to taste

Instructions

  1. First, make meatballs. Preheat oven to 375°F. Place chicken livers into food processor, and process until smooth. If you don’t have a food processor, simply chop liver into very small pieces. In large mixing bowl, combine all ingredients. Mix until incorporated well. Spoon out a little more than a tablespoon of mixture, roll into ball, and place on a baking pan lined with parchment paper. Continue until all mixture is used. Place in oven. Bake for 25 minutes. Remove from oven. Should make about 12 meatballs. Reserve for soup.
  2. Fill Instant Pot inner pot with cabbage, carrots, garlic, and parsnip noodles.
  3. Place meatballs on top.
  4. Cover with broth, to about an inch below Fill line.
  5. Add basil.
  6. Close lid securely.
  7. Press Soup button.
  8. Allow to cook for 30 minutes.
  9. When buzzer sounds, and cooking is done, press Off button.
  10. Allow pressure to decrease naturally for 10 minutes.
  11. Carefully, open lid.
  12. Serve.
  13. Add salt to taste.

Hope y’all enjoy this nutrient filled, warming Instant Pot AIP Cabbage and Liver Meatball Soup.  If you haven’t jumped on the Instant Pot bandwagon, you may want to seriously consider getting one.  This wonderful appliance has transformed the way I cook.  I can easily churn out dish after delicious dish, in half the time.  And, if you already own an Instant Pot, you may want to consider purchasing a second inner pot.  You will be able to easily go from cooking one meal to the next, with your second pot.  This is great for when you’re batch cooking.  I use my two inner pots all the time.  I’ll cook one dish, then pop in another one right away, as the other one cools.  Last week, I cooked four dishes in my Instant Pot, one right after the other.  Now, that’s the way to cut down time during your batch cooking session!
