28 Days Of One-Pot AIP Ebook Review

I am so excited to be able to tell y’all about this awesome new AIP resource, 28 Days Of One-Pot AIP by Christina Feindel of A Clean Plate! Now, some of you are aware of my love of Christina’s Liverwurst recipe from her first ebook, 28 Days Of AIP.  I usually have a batch in my freezer at all times. Christina’s recipes are a big favorite in my house.

For those of you who may not know what Christina’s books are all about, allow me to share some tidbits.  Her ebooks contain full meal plans for 28 whole days of AIP delights. Each meal has links to the actual recipe in the book.  That way, you can easily click on the meal for that day, and you’re taken straight to the recipe.  The meal plans take all of the guesswork out of figuring out what to eat each day.  Christina has carefully designed each day’s plan to include breakfast, lunch, and dinner.  She also provides you with a weekly grocery list, which can be printed out.  It’s about as easy AIP as you can get.

In 28 Days Of One-Pot AIP, you will also get tips on batch cooking and how to use the meal plans and recipes.  It’s all laid out in a very easy to follow format.

And, in case you’re wondering about the recipes, they are all amazing.  Christina covers everything from smoothies to hearty comfort foods.  As in the title, everything can easily be made or cooked in one pot!  Who doesn’t want less dishes to wash?!

Now, if all that doesn’t make you hungry, I don’t know what will.  I cooked the Braised Oxtails recipe and the Coq Au Vin recipe.  Both were outstanding.  I really love the combination of herbs and ingredients Christina puts into each dish.  I’m not a big fan of bland food; and, I never have to worry about that with Christina’s recipes.  They’re always filled with flavor!

Mediterranean Lasagna- Primal, Paleo, and AIP Options

Last week, in my Door To Door Organics delivery, I received two beautiful, large zucchini squash.  Of course, I used one to make my favorite zucchini cheese, inspired by the recipe from I Eat Real Food’s Hayley Stobbs.  The other, I used to make this delicious Mediterranean Lasagna.

Now, I made mine primal, with a little sheep’s milk feta.  I reintroduced some sheep’s milk cheeses a few months ago.  I enjoy it on very rare occasions.  If you’re able to reintroduce some dairy into your diet, you may still want to practice moderation.  Some people have found that excess dairy, from any animal, can cause skin flareups and IBD symptoms.  If that is you, I suggest you use the zucchini cheese option instead.

Primal Mediterranean Lasagna with Greek Salad

I’ve heard from a few of you that you’re getting frustrated with some of us AIP bloggers posting pictures and recipes of some non-AIP foods.  While I understand your frustration, you need to understand that many of us are at different stages of healing.  Most of us have successfully reintroduced healthy foods back into our diets.  The AIP elimination phase is not meant to last forever; and, that is actually good news.  That means we’re healing our autoimmune symptoms.  The same will happen for you, too.

I promise to always provide you with an AIP option if one’s available.  Since most of my meals are based on an elimination phase AIP diet anyway, that shouldn’t be a problem.  This Mediterranean Lasagna recipe can easily be made AIP elimination phase by simply using zucchini cheese instead of feta.  If you’re not a big fan of zucchini cheese, just make it without cheese all together.  It’ll still taste pretty awesome!

Mediterranean Lasagna- Primal, Paleo, and AIP Options

Prep Time: 20 minutes

Cook Time: 45 minutes

Total Time: 65 minutes

Yield: 4 servings

Make yours how you like it- Primal, Paleo, or AIP!

Ingredients

  • 1 pound ground lamb or beef
  • 4 cups Quickie Tomato-less Sauce (recipe below)
  • 1 extra large zucchini (or 2 regular sized), sliced into thin slices lengthwise
  • 2 cups fresh spinach
  • 1 clove garlic, chopped
  • 1/4 cup chopped red onion (about 1/2 small onion)
  • 1/2 cup crumbled feta (primal option) or zucchini cheese (paleo/AIP option)
  • 3 kalamata olives, sliced
  • 1 teaspoon oregano
  • salt, to taste

Instructions

  1. Brown ground meat in large fry pan, over medium heat.
  2. Preheat oven to 375°F.
  3. Assemble lasagna by spooning a layer of tomato-less sauce in bottom of 9”X7”X2” baking dish. Then, place a layer of zucchini slices over tomato-less sauce (you should use 3 slices of zucchini). Next, layer 1/2 of ground meat, 1 cup of spinach, 1/2 of garlic and red onion, and about 1/3 of the cheese.
  4. Spoon on another layer of sauce.
  5. Repeat layering process.
  6. Top second layer with the last of the zucchini slices, tomato-less sauce and cheese.
  7. Add olive slices, oregano and salt.
  8. Place in oven and bake for 45 minutes.
  9. Remove from oven.
  10. Let rest for 5 minutes before serving.

Notes

Quickie Tomato-less Sauce

4 cups chicken or bone broth -- 4 beets, peeled and cut into chunks-- 1 cup chopped onions (about 1/2 onion)-- 1 carrot, chopped-- 3 cloves garlic, chopped-- 1 tablespoon each of basil, oregano and thyme-- 2 tablespoons apple cider vinegar-- 2 tablespoons + extra if needed balsamic vinegar-- salt, to taste

Place all ingredients, except balsamic vinegar and salt into a large saucepan. Bring to a boil, over medium heat. Lower heat and cook until vegetables are very soft, about 20 to 30 minutes. Remove from heat. Use an immersion or regular blender to puree until smooth. Add balsamic vinegar and salt to taste.

Makes about 4 cups.
