As I’m writing this post, I’m suffering from the worst ear and sinus infection I’ve had in years.  My balance is completely off, making walking a very funny sight.  It’s too bad I finished off the last of my Paleo Meatloaf with Shallot Gravy a couple of days ago.  I could really go for some comfort food right now.

Paleo Meatloaf with Shallot Gravy

This recipe brings you all the flavor of the meatloaf you grew up eating, with the added veggies Mom was always trying to get you to eat.  It’s filled with kale and mushrooms for a taste you’ll love.  If you’re on the AIP, just leave out the egg and add 2 tablespoons filtered water.  Don’t like mushrooms? Sub in some onions.  It’s completely customizable!

Prep Time: 15 minutes

Cook Time: 45 minutes

Total Time: 1 hour

Yield: 1 loaf, about 6 servings

Serving Size: 1 slice

Ingredients

  • Meatloaf
  • 1 pound ground beef
  • 1 small onion, chopped fine
  • 1 cup finely chopped kale
  • 3 cloves garlic, crushed
  • 1 cup finely chopped mushrooms
  • 1 egg (omit for AIP & add 2 tablespoons filtered water)
  • 2 tablespoons Otto’s Cassava Flour or arrowroot starch
  • 1/2 teaspoon salt
  • Gravy
  • 1 tablespoon cooking fat
  • 1 tablespoon Otto’s Cassava Flour
  • 2 shallots, sliced into rings
  • 4 cups beef broth
  • 1 tablespoon coconut aminos
  • 2 teaspoons finely chopped basil
  • salt, to taste

Instructions

  1. Preheat oven to 375°F.
  2. Mix together all meatloaf ingredients.
  3. Empty mixture onto a sheet pan, lined with parchment paper.
  4. Form into a loaf.
  5. Place in oven and bake until cooked through, about 40-45 minutes.
  6. While meatloaf is baking, make gravy.
  7. Melt cooking fat, over medium heat, in a medium saucepan.
  8. Add cassava flour and continuously stir until light brown in color.
  9. Add shallots to saucepan.
  10. Stir.
  11. Pour in one cup of broth.
  12. Stir well until gravy is no longer separated.
  13. Cook for 5 minutes.
  14. Slowly add in remaining broth, stirring well.
  15. Add in coconut aminos, basil and salt.
  16. Lower heat.
  17. Continue to cook, over low heat, for 10 minutes.
  18. Remove from heat.
  19. Serve over meatloaf.

I’m headed to the doctor’s office today.  Normally, I wouldn’t even bother to go, with an ear and sinus infection; but, I wanted to have some blood work done anyway.  If you receive my newsletter, you read about how important it is to listen to what your body is telling you. The day I wrote that, I was experiencing problems with my balance while doing my workout.  I also didn’t have the strength and endurance I usually have.  Little did I know at the time, I would wake up to this horrible infection.  Luckily, I paid attention to the clues my body was giving me.  I didn’t go overboard while working out when I just wasn’t feeling it.  Always listen to what your body is telling you.  When you tune into what your body is saying, you will know right away if something is just not right.  Then, you can treat yourself well.
