AIP Paleo Bacon Burger Skillet Recipe (Keto/Gluten Free)

Last week, I, and several other AIP bloggers, hosted a week of PSA posts, on our blogs or over social media. The theme was “How I AIP” and “AIP4Me”.  Basically, we wanted to promote positivity in the AIP community.  We also wanted to show ways that we’ve made the AIP work for us. Hopefully, you got to read some of these posts.

In honor of our PSA, I actually ate mostly elimination phase AIP all week. I didn’t have to, because I already did my time on it.  But, just to show you how easy it is to follow, I did it. So, when I batch cooked last week, I created this AIP Paleo Bacon Burger Skillet with Yam Noodles recipe. Enjoy!

 

AIP Paleo Bacon Burger Skillet Recipe (Keto/Gluten Free)

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Yield: 2 to 3 servings

AIP Paleo Bacon Burger Skillet Recipe (Keto/Gluten Free)

Ingredients

  • 1 pound grass fed ground beef
  • 1/2 cup chopped onions
  • 1- 8 ounce package No Oodles yam noodles, drained
  • 3 green onions, chopped
  • 4 slices cooked bacon, crumbled
  • salt, to taste

Instructions

  1. Brown ground beef over medium heat, in large skillet.
  2. Add chopped onions and continue to cook until onions are clear.
  3. Lower heat.
  4. Stir in noodles, green onions, and bacon.
  5. Cook for 5 minutes, or until warmed through.
  6. Remove from heat.
  7. Add salt to taste.
  8. Serve.

I served my AIP Paleo Bacon Burger Skillet with Yam Noodles topped with homemade avocado crema. Here’s a quick recipe for you:

Avocado Crema Recipe: 1 avocado, pitted and peeled; 1 clove garlic; 1/3 cup coconut cream (from a refrigerated can of coconut milk); 1/2 cup fresh cilantro leaves; 1/2 teaspoon salt

Place all ingredients in small food processor or blender. Process until smooth.

I’m hoping to put together another post for y’all this week. I make no promises though. Working on projects has had me busier than I imagined I would be.  Please keep this in mind when sending me your questions.  If it’s something you could figure out on your own, or with a little research, consider doing just that.  If it’s a question of whether or not the AIP could help you, I think you can pretty much figure out what I’m going to say already. Yes, it will. And, I’m going to say this again, if you have interest in starting the AIP, get and read The Paleo Approach, by Dr. Sarah Ballantyne.  You should not even think about starting the AIP without first having read that book. AIP Instant Pot Blackberry Balsamic Chicken Recipe

The other day, while menu planning for the week, I decided to make my Strawberry Balsamic Chicken as part of my menu.  Later, at the grocery store, I ran across some beautiful blackberries. It occurred to me that I could use these blackberries in place of strawberries, when making my chicken dish.  That was the beginning of my AIP Instant Pot Blackberry Balsamic Chicken recipe.

So, you may be asking why not just tell people to replace the strawberries with blackberries? Well, because that would be too easy.  When I pulled up the original recipe, it was actually cooked in a cast iron skillet.  But, I wanted to cook this dish in the Instant Pot.  What I did was create an entirely new recipe.  Not only have I changed the method of cooking; but, I’ve also changed many of the ingredients and amounts.  This AIP Instant Pot Blackberry Balsamic Chicken recipe is all new!

AIP Instant Pot Blackberry Balsamic Chicken Recipe

Prep Time: 15 minutes

Cook Time: 45 minutes

Total Time: 1 hour

Yield: 6 servings

AIP Instant Pot Blackberry Balsamic Chicken Recipe

Ingredients

Instructions

  1. Place all ingredients, except arrowroot flour, into Instant Pot.
  2. Close lid.
  3. Press “Poultry” button.
  4. When done cooking, press “Warm/Cancel”.
  5. Allow to release pressure naturally fro 10 minutes.
  6. Carefully open lid.
  7. Remove chicken pieces from Instant Pot, and set aside.
  8. Pour blackberry sauce through mesh strainer, into medium bowl.
  9. Stir and mash blackberries to strain out seeds.
  10. Pour strained sauce back into Instant Pot.
  11. Press “Saute” button, and whisk arrowroot flour into sauce.
  12. Cook until sauce thickens, about 10 minutes.
  13. Add chicken back into sauce and warm through for 5 minutes.
  14. Press “Warm/Cancel” button.
  15. Serve chicken with sauce ladled on top.

I really think you’re going to love this recipe.  It can be cooked with either chicken breasts or thighs.  I’m pretty sure it would work just as well with legs or wings, too!  You’ll want to be sure to add a little bowl of extra sauce for dipping.  I even used the sauce as dressing for my salad a few days later.  It’s really that good!

While thumbing through my review copy, I saw so many recipes for dishes I wanted to dig into.  The first recipe that caught my eye was Hot Dogs On A Stick.  I used to love corn dogs before going paleo. I knew it would be the first recipe I would cook.  But, then I needed something to go with them; so, I settled on good ol’ Onion Rings.  It was a match made in heaven!

Over the holidays, I’m planning on making several more recipes, Pumpkin Mousse Cheesecake, Cider Mill Donut Holes, Garlic Bread Bites, Duck Fat Fries, Chocolate Coconut Cream Pie, and Crab Cake and Bacon Scramble Hash, just for starters.  I think I’ve got my dessert table covered!

Now, for all my AIP buddies, there are not many AIP compliant recipes in All-American Paleo Table. There are a lot of eggs, nuts, and some dairy used throughout the recipes.  If you’ve made some reintroductions, like I have, you will be able to find more recipes you can enjoy.  If you’re creative in the kitchen, you may be able to switch out some ingredients.  For example, for one of the recipes that calls for almond flour, for which I have an allergy, I will try using Otto’s Cassava Flour instead.  It’s worked in other experiments I’ve done.  Hopefully, it will work again.
