My Favorite AIP Sardine Salad Recipe

Anyone who follows me on my social media pages, knows that I love my sardine salads.  I eat at least one a week. While I realize they are an acquired taste for many, I have loved sardines since I was a little girl.  I remember watching my grandmother open a little tin, containing itty bitty fish.  I was fascinated.  I asked her if I could taste one.  She smiled and said, “I don’t know if you’re going to like this.” Looking into my big, pleading eyes, she took a forkful of fish, and placed it into my open mouth. The salty, oily fish set my tastebuds on fire.  I was hooked! Hee hee, get it? Hooked? Fish?

AIP Paleo Red Onion-Lime Chicken Recipe

I was planning a really great post for y’all today.  But, if you follow me on social media, you most likely know I’ve been in redecorating hell all week.  The painting was supposed to be done on Thursday; however, as often happens, there were issues.  So, here I am on Friday, still in a mess. Rather than not post at all, I decided to share my recipe for AIP Paleo Red Onion-Lime Chicken.  This is a really easy, one skillet meal that you can prepare in about an hour.

AIP Paleo Red Onion-Lime Chicken Recipe

Prep Time: 5 minutes

Cook Time: 55 minutes

Total Time: 1 hour

Yield: 4 servings

I usually serve this chicken dish with my Smothered Cajun Greens on the side. You could also do mashed cauliflower or sweet potato.

Ingredients

  • 1 tablespoon cooking fat ( coconut oil, lard, bacon fat, etc.)
  • 2 pounds chicken pieces of your choice
  • 1 red onion, sliced into rings
  • 2 garlic cloves, sliced
  • 1 cup chicken broth ( bone broth, if you have it)
  • juice from 1 lime (about 1 tablespoon)
  • 1 lime, sliced
  • 1 cup fresh cilantro leaves, divided
  • 1 tablespoon honey or maple syrup
  • salt to taste

Instructions

  1. Preheat oven to 400°F. In large cast iron or ovenproof skillet, heat cooking fat until it melts and pan is very hot. Dry chicken pieces and salt on all sides. Lay chicken into hot skillet. Brown chicken on all sides ( about 3 minutes per side). Once chicken is browned, add red onion to skillet. Cook until onions are soft and starting to brown. Add garlic. Continue to cook for 1 minute. Add chicken broth, lime juice and slices, half of cilantro, and honey or maple syrup. Give it a good stir to mix ingredients. Remove from heat and place skillet in oven. Cook for 40 minutes, or until internal temperature of chicken reaches 160° F. Remove from oven. Sprinkle on other half of cilantro leaves. Salt to taste. Serve.

AIP Paleo Mini Meat and Veggie Loaves Recipe

I wanted to share a quick and easy recipe today.  My AIP Paleo Mini Meat and Veggie Loaves recipe is delicious and nutritious. It’s completely AIP and TPA (The Paleo Approach) compliant.  Plus, it’s a great way to sneak some healthy vegetables into your picky eater’s meal.

You can add these AIP Paleo Mini Meat and Veggie Loaves to your batch cooking roundup.  They can be individually wrapped and frozen.  Then, simply thaw and reheat.  I usually thaw mine in the fridge overnight.  When I’m ready to reheat, I wrap my loaf in parchment paper and place in my toaster oven, at a temp of 375 degrees, for about 20 minutes.
