Mushroom Artichoke Chicken Skillet Recipe

I love one skillet meals! If you’re looking to save some time in the kitchen, one skillet meals are the answer. This Mushroom Artichoke Chicken Skillet is quick, easy and oh so delicious.

AIP Mushroom Artichoke Chicken Skillet

Usually, I try to prep some veggies for the week on Tuesdays. I’ll chop some kale, carrots, apples, mushrooms, onions, celery, and whatever else I plan to use that week. I also keep some chopped veggies in the freezer. That way, I can easily pull them out when I’m ready to cook a meal. Preparation is key when your on the autoimmune protocol (AIP).

With my pre-chopped and frozen veggies, I was able to whip up this Mushroom Artichoke Chicken Skillet in no time. Hope you enjoy it!

Mushroom Artichoke Chicken Skillet Recipe

Prep Time: 10 minutes

Cook Time: 50 minutes

Total Time: 1 hour

Yield: 2 to 4 servings

Ingredients

  • 1 tablespoon cooking fat
  • 2 pounds chicken legs or thighs
  • 8 ounces mushrooms, sliced
  • 12 ounce bag frozen artichoke quarters
  • 2 garlic cloves, chopped
  • 1 cup chicken or bone broth
  • 1/4 cup coconut aminos
  • 1 tablespoon dried oregano
  • 1 tablespoon dried thyme
  • 1 tablespoon dried rosemary
  • 2 green onions, sliced
  • salt, to taste

Instructions

  1. Preheat oven to 400° F.
  2. Heat cooking fat in very large cast iron skillet, over medium heat.
  3. Dry chicken pieces and season with salt.
  4. Once fat is melted, place chicken in skillet.
  5. Brown chicken on all sides, about 3 minutes per side.
  6. Add mushrooms, artichokes and garlic to skillet.
  7. Stir.
  8. Add broth and coconut aminos.
  9. Sprinkle on oregano, thyme and rosemary.
  10. Add green onions.
  11. Salt, to taste.
  12. Place in oven and cook until internal temperature of chicken reaches 160° F, about 40 minutes.
  13. Remove from oven.
  14. Serve.

One Pot Cranberry Apple Chicken with Cabbage- Instant Pot & Slow Cooker Versions

I love simplicity!  When times are busy, like they have been this week, I want to put together dinner quickly.  That’s probably why I love my Instant Pot so much.  I can cook meals quickly and easily. Boom, dinner’s done! This Cranberry Apple Chicken with Cabbage was cooked in 3o minutes. You just can’t beat that!

One Pot Cranberry Apple Chicken with Cabbage|Paleo Cajun Lady

For those of you who prefer a slower way of cooking, I didn’t forget about you.  I made a slow cooker version of my Cranberry Apple Chicken with Cabbage just for you.  That way, you can cook it low and slow, just the way you like it.

One Pot Cranberry Apple Chicken with Cabbage- Instant Pot & Slow Cooker

Prep Time: 5 minutes

Cook Time: 30 minutes

Total Time: 35 minutes

Yield: 4 servings

One Pot Cranberry Apple Chicken with Cabbage- Instant Pot & Slow Cooker cranberry apple chicken One Pot Cranberry Apple Chicken with Cabbage- Instant Pot & Slow Cooker Versions Cranberry Apple Chicken 1

This flavorful one pot meal can be cooked quickly in your Instant Pot or slowly in your slow cooker. Have it just the way you like it!

Ingredients

  • 1 small head cabbage, cored and shredded
  • 2 pounds boneless, skinless chicken thighs or breasts
  • 2 apples, cored and sliced
  • 1/2 cup chicken broth (bone broth, if you have it)
  • 1 cup fresh or frozen cranberries
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon maple syrup
  • 1 teaspoon cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon salt + more, to taste

Instructions

  1. In Instant Pot
  2. Place all ingredients, in order above, into Instant Pot.
  3. Close lid.
  4. Press Poultry button.
  5. Set time for 20 minutes.
  6. Instant Pot will start cooking process.
  7. When done cooking, press off button.
  8. Allow pressure to release naturally for 10 minutes.
  9. Open lid.
  10. Serve.
  11. In Slow Cooker
  12. Place all ingredients, in order above, into slow cooker.
  13. Set on low and cook for 4 hours, or until internal temperature of chicken reaches 165°F.
  14. Serve.

Notes

Cook Time for Slow Cooker is 4 hours.
