Whew! Things have been busy around here! I’m sure you’re all feeling the holiday rush, too. It seems like everyone needs a bit of our time right now. Plus, there are gifts to get and wrap, parties to attend and host, and decorations to dig out of the attic and put up. I could go on forever! I love simplicity! When times are busy, like they have been this week, I want to put together dinner quickly. That’s probably why I love my Instant Pot so much. I can cook meals quickly and easily. Boom, dinner’s done! This Cranberry Apple Chicken with Cabbage was cooked in 3o minutes. You just can’t beat that!
For those of you who prefer a slower way of cooking, I didn’t forget about you. I made a slow cooker version of my Cranberry Apple Chicken with Cabbage just for you. That way, you can cook it low and slow, just the way you like it.
I hope y’all got a chance to watch the Conventional Medicine & The Autoimmune Protocol discussion on Monday night. I had so much fun with my fellow AIP bloggers, Samantha of Sweet Potatoes and Social Change, Angie Alt of Autoimmune Paleo, and Jaime of Gutsy By Nature. Hopefully, we answered your questions on finding balance between traditional healthcare and the AIP. If you missed it, you can view the video here.
I want to end with an awesome announcement, Bre’anna from He Won’t Know It’s Paleo, just released her new cookbook today! I will be doing a full review and sneak peak recipe on Friday. I can tell you, this cookbook is going to be a much used addition to every AIP cook’s library. I’ll be sharing dishes I cook from this lovely cookbook throughout this week, over my social media sites. Be sure to check it out.
Well, that’s it for today. I hope you all enjoy my Cranberry Apple Chicken with Cabbage recipe. And, if you get a chance, watch the video of the AIP Summit. You can see how much I use my hands when I talk! Oh, you can also see the show my dog, Giddy, puts on while I’m trying to talk. I guess she wanted her 15 minutes of fame!
As always, I wish you all good health and good food!
As I’m writing this, I have the worst sore throat I’ve had in years. I knew I was in trouble last night when I felt the first pain in my throat. I immediately took my temperature. It was 97.1. Well, I didn’t have a fever, right? That must be a good thing, right? No, it’s not a good thing. I’ve learned, over time, that if I’m coming down with something, and my body is too busy attacking things it shouldn’t, it will not fight the invading germs. If I had a fever, it would show that my immune system was working properly to rid my body of the invaders. The fact that my body temperature was below normal, showed my immune system was on holiday. So, I was very happy I had jarred some of my AIP Paleo Slow Cooker Cranberry-Applesauce.
They (I’m not quite sure who “they” are) say, an apple a day keeps the doctor away. I’m going to put that to the test by eating my AIP Paleo Slow Cooker Cranberry-Applesauce every day until I’m better. And, of course, I’m going to add other healing foods such as my bone broth, sardine salads, liver, and healing juices. Hopefully, this bug will be gone before too long.
I think you’re really going to love this recipe. There are less than 10 ingredients! Plus, you just toss everything in your slow cooker and let it cook. After 4 to 5 hours, you have healthy and delicious AIP Paleo Slow Cooker Cranberry-Applesauce!
Stay healthy, y’all! I’m going to gargle with salt water now.
