A couple of weeks ago, after I knocked my tooth loose, I had to figure out how to eat the portobello burger, planned for my meal that night.  I knew there was no way I could bite into a burger, without knocking my tooth out completely.  Some quick thinking, and a few tweaks later, I came up with this AIP Paleo Portobello Burger Skillet recipe.

Basically, I’ve had to remake a lot of my meals since then.  I’ve been on a low-chew plan over the last few weeks.  Although, I’ve become quite proficient at chewing with my back teeth only.  Hopefully, you’re not trying this recipe because you’re having dental problems.  But, if you are, I rate it pretty well on the low-chew scale. LOL! Enjoy!

AIP Paleo Portobello Burger Skillet Recipe

Prep Time: 15 minutes

Cook Time: 20 minutes

Total Time: 35 minutes

Yield: 4 servings

Ingredients

  • 2 strips bacon, sliced
  • 1 small red onion, chopped
  • 1 pound ground beef
  • 2 portobello mushroom tops, roughly chopped into large chunks
  • 1 tablespoon balsamic vinegar
  • 4 cups fresh spinach
  • sea salt, to taste

Instructions

  1. Fry bacon in large cast iron skillet until lightly browned.
  2. Add red onion and stir.
  3. Cook for 5 minutes, stirring often.
  4. Add ground beef and cook until browned.
  5. Add mushroom pieces and balsamic vinegar.
  6. Cook for 5 minutes, stirring often.
  7. Add spinach and stir.
  8. Cook until spinach is wilted.
  9. Remove from heat.
  10. Serve.
  11. Add salt to taste.

If you’re experiencing dental or gum problems, because of your autoimmune disease, I beg you to go to your dentist. Lupus really destroyed my gums.  I was so concerned about healing my other symptoms, I pretty much just let my dental issues continue to get worse.  Now that my other symptoms have been squashed, I’m left with the destruction left behind.  Don’t be like me! Get yours remedied before it’s too late.

And, as if my dental problems weren’t bad enough, I’ve been fighting with every dentist in town, who takes my insurance. First, I was told I had to be on a special list in order to get treatment.  Now, mind you, this list only comes out once a month….and, you have to already be on the list for that month to be treated. My tooth was loose the third week of January.  I was not on the January list.  So, I called my insurance company, and had them add me to February’s list.  They also called the dentists’ office to see if they would see me earlier, due to the emergency situation. All of them refused!  Problem is, my insurance is very good…for me.  These dentists have to accept a lesser fee in order to be a provider.  Shouldn’t be my problem…..but, it is.  Then, I called my dentist to make my appointment, on February 1. They told me they had not received the list from my insurance company yet (it usually was faxed to their office on the 6th); so, I couldn’t make the appointment until they visually saw my name on the list.  Pure insanity! Today, I’m calling to see if the list was received.  Hopefully, I will be able to make my appointment.  If not, expect to see lots of social media posts, with their names mentioned, telling people to NEVER go to them. And, you can bet, I’m going to tell them that, if they give me any more gruff.

Gluten Free Bok Choy Shrimp with Noodles- AIP Paleo Modifications

Many of you already know I have reintroduced white rice back into my diet.  Basically, white rice is, what I would consider a gray area, in the paleo world.  Many in the paleo community allow white rice, on occasion, usually using the hashtag “teamwhiterice”.  It’s also found it’s way into many cookbooks with paleo in the title.  So, I’ve put it into the gray area category.  This Gluten Free Bok Choy Shrimp with Noodles recipe is the result of my wanting to add white rice noodles into my meal plan.

Gluten Free Bok Choy Shrimp with Noodles

Now, if you’re on the AIP, I’ve added modifications for you.  You’ll be switching out the white rice noodles with zoodles, cassava, or yam noodles.  Also, you’ll be omitting the curry powder altogether.  If you’d like to add a little more spiciness to the dish, you can add a bit of finely shredded pure horseradish, toward the end of cooking.

Gluten Free Bok Choy Shrimp with Noodles- AIP Paleo Modifications

Prep Time: 13 minutes

Cook Time: 17 minutes

Total Time: 30 minutes

Yield: 4 servings

Ingredients

  • 1 tablespoon coconut oil
  • 4 cups chopped bok choy
  • 1 cup sliced mushrooms, any variety
  • 2 cloves garlic, chopped
  • 1 cup sliced red onion
  • 1 pound shrimp, peeled and deveined
  • 1 cup cooked rice noodles (use 2 cups zoodles for AIP paleo)
  • 1/4 cup coconut aminos
  • 2 tablespoons fish sauce
  • 1/2 cup bone or chicken broth
  • 1 teaspoon ground ginger
  • 1 teaspoon to 1 tablespoon curry powder- depending on preferred spiciness *(Omit for AIP)
  • 1 tablespoon arrowroot starch
  • sea salt, to taste

Instructions

  1. Heat coconut oil, in large frying pan, over medium heat, until melted.
  2. Add bok choy, mushrooms, garlic, and onion to pan, and cook for 5 minutes, stirring often.
  3. Add shrimp, and stir.
  4. Add rice noodles or zoodles, coconut aminos, fish sauce, and bone or chicken broth.
  5. Stir, mixing all ingredients well.
  6. Add ginger and curry powder, and stir.
  7. Allow to cook for 10 minutes, over medium heat.
  8. Sprinkle on arrowroot starch.
  9. Mix well,
  10. Cook for an additional 2 minutes.
  11. Remove from heat,
  12. Allow to sit for 1 minute.
  13. Add salt, to taste.
  14. Serve.

I hope you enjoy my Gluten Free Bok Choy Shrimp with Noodles recipe.  I’ll definitely be adding more white rice noodles to some of my recipes.  I believe that after you’ve successfully healed your autoimmune symptoms with the AIP, you should try to reintroduce as many healthy foods back into your diet as possible.  I’m not saying that you should go back to the processed, tainted foods you ate before, though.  But, I am saying that, if a food can offer a health benefit to you, consider reintroducing it.  I am loving the additions I’ve made to my diet.  It can also be beneficial to your mental state to add back certain foods. I know the fact that I can now enjoy actual noodles with my meals, makes me much happier.  Once you’ve done your time on the AIP, don’t be afraid to try adding back foods you used to enjoy.  But, be sure to do it wisely.  Don’t try to add back gluten-filled noodles, if you have a gluten intolerance.  Instead, try white rice noodles.  And, don’t neglect to read your food labels.  Many of the processed gluten free foods contain tons of bad-for-you additives and fillers.  Find the products that have the least amount of ingredients, and no fillers, emulsifiers, or additives, like guar gum and carrageenan.  Keep your ingredients as pure as possible!

Y’all are just loving the Instant Pot recipes lately.  Well, I’ve got a new one for you.  This Cabbage and Liver Meatball Soup is completely AIP paleo, healthy, and perfect for those chilly winter days and nights.  Plus, it’s a great way to get your liver in your diet.  By using chicken livers, you get a much milder liver flavor.  Mixed in with the other flavors, you won’t even know you’re eating liver!

Instant Pot AIP Paleo Cabbage and Liver Meatball Soup

Instant Pot AIP Cabbage and Liver Meatball Soup Recipe

Ingredients

  • Meatballs
  • 1/2 pound chicken livers
  • 1/2 pound ground beef
  • 2 tablespoons Otto’s Naturals Cassava Flour
  • 2 cloves garlic, minced
  • 1 tablespoon each basil, oregano and rosemary
  • 1/8 teaspoon sea salt
  • Soup
  • 1 small head cabbage, chopped
  • 2 carrots, sliced
  • 2 cloves garlic, sliced
  • 2 parsnips, spiralized (If you don’t have a spiralizer, just slice)
  • 4 cups plus bone broth or chicken broth
  • 1 tablespoon basil
  • salt, to taste

Instructions

  1. First, make meatballs. Preheat oven to 375°F. Place chicken livers into food processor, and process until smooth. If you don’t have a food processor, simply chop liver into very small pieces. In large mixing bowl, combine all ingredients. Mix until incorporated well. Spoon out a little more than a tablespoon of mixture, roll into ball, and place on a baking pan lined with parchment paper. Continue until all mixture is used. Place in oven. Bake for 25 minutes. Remove from oven. Should make about 12 meatballs. Reserve for soup.
  2. Fill Instant Pot inner pot with cabbage, carrots, garlic, and parsnip noodles.
  3. Place meatballs on top.
  4. Cover with broth, to about an inch below Fill line.
  5. Add basil.
  6. Close lid securely.
  7. Press Soup button.
  8. Allow to cook for 30 minutes.
  9. When buzzer sounds, and cooking is done, press Off button.
  10. Allow pressure to decrease naturally for 10 minutes.
  11. Carefully, open lid.
  12. Serve.
  13. Add salt to taste.

Hope y’all enjoy this nutrient filled, warming Instant Pot AIP Cabbage and Liver Meatball Soup.  If you haven’t jumped on the Instant Pot bandwagon, you may want to seriously consider getting one.  This wonderful appliance has transformed the way I cook.  I can easily churn out dish after delicious dish, in half the time.  And, if you already own an Instant Pot, you may want to consider purchasing a second inner pot.  You will be able to easily go from cooking one meal to the next, with your second pot.  This is great for when you’re batch cooking.  I use my two inner pots all the time.  I’ll cook one dish, then pop in another one right away, as the other one cools.  Last week, I cooked four dishes in my Instant Pot, one right after the other.  Now, that’s the way to cut down time during your batch cooking session!
