Recently, I’ve really been trying to reintroduce more healthy foods into my diet.  Now that I’ve learned to cycle my reintroductions with my hormones, I’m finding it easier to be successful. When creating this Instant Pot Meatball & Okra Gumbo recipe, I decided to reintroduce cooked tomatoes. Happily, it worked out for me! The next step is to make an actual tomato sauce; but, I’m not that brave yet.

Creating Instant Pot recipes is so much fun! I love taking foods that normally need hours to cook, and cooking them in less than an hour.  Most are as easy as tossing all of the ingredients into the inner pot, setting to cook, and then, having a fully cooked meal in minutes. This recipe has quickly become one of my absolute favorites.  It’s not a typical or classic gumbo recipe.  I’ve actually never had a gumbo with meatballs in it.  But, who doesn’t love meatballs?  Putting them in a gumbo seemed like a natural progression in my recipe creation.  Enjoy!

 

AIP Paleo Instant Pot Meatball & Okra Gumbo Recipe

Prep Time: 30 minutes

Cook Time: 30 minutes

Total Time: 1 hour

Yield: 4 servings

AIP Paleo Instant Pot Meatball & Okra Gumbo Recipe instant pot Paleo Instant Pot Meatball & Okra Gumbo Recipe IMG 4954

Ingredients

  • 2 pounds okra, sliced
  • 1 large onion, chopped
  • 1 tablespoon avocado oil
  • 3 1/4 cup chicken or bone broth, divided
  • 3 cloves garlic, chopped
  • 3 teaspoons chopped fresh basil
  • 1 package 26.46 ounce Pomi chopped tomatoes (omit for elimination AIP)
  • 1 bay leaf
  • 4 cups filtered water
  • salt, to taste
  • Meatballs
  • 1 pound ground pork or Italian sausage
  • 1/2 cup chopped parsley
  • 1 clove garlic
  • 1/2 teaspoon salt

Instructions

  1. Place okra, onion, avocado oil and 1/4 cup broth into Instant Pot.
  2. Close lid.
  3. Press “Manual” button.
  4. Set time to 15 minutes.
  5. Allow to cook.
  6. While okra is cooking, make meatballs.
  7. Combine all meatball ingredients and mix well.
  8. Roll mixture into small meatballs, about 1” in diameter. You should end up with about 16 meatballs.
  9. Set aside.
  10. Once okra has finished cooking, turn off Instant Pot and release pressure by flipping release valve to “Venting”. When all pressure is released, open lid.
  11. Stir okra mixture and press “Saute” button on Instant Pot.
  12. Cook, while stirring, for 10 minutes.
  13. Turn off Instant Pot.
  14. Add meatballs and the remainder of ingredients, except salt, to Instant Pot.
  15. Replace lid. Don’t forget to put release valve back to “Sealing”.
  16. Press “Soup” button and allow to cook for 30 minutes.
  17. When done cooking, turn off Instant Pot.
  18. Allow pressure to release naturally for 10 minutes.
  19. Open lid.
  20. Stir and salt to taste.
  21. Serve over cauli-rice or white rice.

Be sure to omit the tomatoes, if you’re elimination phase AIP. I promise, it will still taste wonderful without them.  I think you’re gonna love my Instant Pot Meatball & Okra Gumbo!  If you’re starting to make food reintroductions, consider getting a copy of Eileen Laird’s Reintroducing Foods On The Autoimmune Protocol.  I found it to be very helpful in teaching me to make reintroductions safely. Believe me, it’s not as easy as you think it’s going to be.  I even printed and laminated some of the pages for easy reference.  I still go back to them each time I reintroduce a new food.  It doesn’t hurt to review. Those of you who follow me on Instagram and Facebook got to see some pretty amazing meals over the weekend.  I made real gluten-free, paleo French Bread, with Otto’s Naturals Cassava Flour! Yeah, that’s right, French Bread!

Of course, the first meal I made was a Shrimp Po-Boy.  Before I started eating paleo, the first thing I would ask for, when visiting New Orleans, was a Po-Boy.  Shrimp and Roast Beef were my favorites. Since going paleo, and especially AIP, I never thought I’d be able to enjoy another po-boy, with French bread, ever again. On Saturday, I had my shrimp po-boy…..with French bread! And, man, was it good!

To make the French bread, I followed the recipe here.  I’m not sure if it can be viewed without an Instagram account, though. Try it and see.  I’m going to ask if they’ll let me post the recipe here; but, it’ll take me a couple of weeks to get it up.

For the shrimp, I used Rachael Bryant‘s recipe for Crispy Shrimp in her Nourish cookbook. If you don’t have this cookbook, you’re really missing out.  It’s one of my top AIP cookbooks! You can get a copy here.

Now, I’ve told everyone that Otto’s Naturals Cassava Flour is the only flour I’ll use to make a proper Cajun roux.  It’s the only paleo flour that does not create a gritty, weird tasting roux.  Seriously y’all, I’m not fooling around here.  In fact, make sure you check out Paleo Magazine‘s Readers Favorites Holiday cookbook 2015, for my Cajun Chicken and Andouille Sausage Gumbo recipe. I state, quite clearly, Otto’s Naturals Cassava Flour is the only flour I will recommend.  I also have my Blueberry-Peach Cobbler, made with their flour, featured in the same magazine.  I believe it goes on sale at the end of October.  I’ll be sure to let y’all know when it’s available.
