AIP Paleo Oregano Roasted White Sweet Potatoes Recipe

Well, it’s time to start announcing some of the things I’ve been so busy working on. Today, I’d like to share a really easy recipe with you.  I often batch cook these AIP Paleo Oregano Roasted White Sweet Potatoes, to eat throughout the week.  To reheat them, I simply wrap them in foil, lined ith parchment paper, and place them in my toaster oven for about 5 minutes.

AIP Paleo Oregano Roasted White Sweet Potatoes Recipe

Prep Time: 10 minutes

Cook Time: 30 minutes

Total Time: 40 minutes

Yield: 4 servings

Ingredients

Instructions

  1. Preheat oven to 375 degrees F.
  2. Place all ingredients into large mixing bowl.
  3. Mix until potatoes are well coated.
  4. On a baking sheet pan, lined with parchment paper, lay out potatoes in a single layer.
  5. Place in oven and cook for 30 minutes, flipping wedges over half way through cooking.
  6. Remove from oven.
  7. Serve.

Most of you know by now, I’m a huge fan of batch cooking.  Seriously, I have no idea how I would survive if I didn’t batch cook most of my meals.  Ever since I started keeping track of my macro ratios, I’ve switched to eating leaner cuts of meat.  My favorite lean meat is skinless, boneless chicken breasts.  But sometimes, when baking them, they can become a bit too dry and bland.  I started experimenting with different marinades and methods of cooking. Since grilling is one of my favorite methods, I purchased a small indoor grill.  It’s awesome! I get juicy, delicious, grilled chicken breasts every time.

Paleo Pineapple-Ginger Grilled Chicken Breasts

This marinade is the result of one of my experiments gone totally right.  Each week, I pull out my trusty indoor grill, and cook a few of these grilled chicken breasts, to eat throughout the week.  This Pineapple-Ginger Grilled Chicken makes it into the rotation quite often.

Paleo Pineapple-Ginger Grilled Chicken Recipe- AIP Modification

Prep Time: 20 minutes

Cook Time: 25 minutes

Total Time: 45 minutes

Yield: 4 breasts

Serving Size: 1 breast

Ingredients

Instructions

  1. Place all ingredients in large bowl or resealable plastic bag.
  2. Mix well.
  3. Place bowl or bag in fridge to marinate for 20 minutes to 1 hour.
  4. Prepare grill. If using and indoor grill, set temperature to 390˚ F.
  5. Place chicken breast on grill and cook until internal temperature reaches 160˚F, about 20 minutes, flipping midway through cooking.
  6. To get grill marks, flip each side with grill slats horizontal and then vertical.
  7. Remove from grill.
  8. Serve.

Notes

Chicken breasts can be stored for up to a week in the fridge.

There’s no denying it, batch cooking is a lifesaver when you’re on the AIP.  No matter how busy I am, I always make time to batch cook my foods for the week.  At times, I have my Instant Pot, slow cooker, oven, and toaster oven, all going at the same time.  This recipe for Roasted White Sweet Potatoes with Dill is one of my favorite go-to batch cooking recipes.

AIP Paleo Roasted White Sweet Potatoes with Dill

White sweet potatoes can be very difficult to find, in some areas.  Only one grocery store near me sells them.  You can usually find them at an Asian grocer.  I can tell you, they are definitely worth finding!

AIP Paleo Roasted White Sweet Potatoes with Dill Recipe

Prep Time: 10 minutes

Cook Time: 45 minutes

Total Time: 55 minutes

Yield: 4 servings

AIP Paleo Roasted White Sweet Potatoes with Dill Recipe roasted white sweet potatoes AIP Paleo Roasted White Sweet Potatoes with Dill Recipe IMG 4723

Ingredients

  • 2 to 3 white sweet potatoes, cut into home fries
  • 2 tablespoons olive oil
  • 1/4 cup chopped fresh parsley
  • 1 tablespoon chopped fresh dill
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 375°.
  2. In a large mixing bowl, toss together all ingredients.
  3. Lay potatoes on baking sheet, lined with parchment paper.
  4. Put in oven and roast for 25 to 30 minutes, until bottoms are browned.
  5. Flip fries over.
  6. Bake for another 10 to 15 minutes, until cooked through.
  7. Serve.

I hope you enjoy my Roasted White Sweet Potatoes with Dill recipe.  The combination of sweet and dill flavors are so refreshing.  As we move into Fall, I like to combine flavors of the passing season with flavors of the new season.  I think this recipe does exactly that.

Talking about Fall, I hope you’re all enjoying the new schedules, colors and flavors that come with it. I just switched out my wardrobe to my Fall wear.  I know a lot of people are embracing the capsule wardrobe.  While, for some, I can see how it’s a good idea.  But, for me, it’s just not something I want to do.  I sift through my wardrobe every season, and donate the clothes I haven’t worn, or that don’t fit.  I just can’t see how whittling what’s left down to sixteen or so pieces could ever make me happy.  I love clothes!
