Normally, I would would give you a post with all of the recipes from my batch cooking adventures of the week. But, after I created this one, I knew it deserved a post of it’s own. My AIP Paleo Strawberry Lemonade Chicken recipe is very similar to my Strawberry Balsamic Chicken recipe, with a few different twists. So, if you liked that recipe, you’re going to love this one.

This dish is the perfect end-of-summer meal. It’s refreshing and fruity! Enjoy!
Ingredients
- 1 tablespoon cooking fat (coconut oil, bacon fat, lard, etc.)
- 5 to 6 chicken legs or thighs
- sea salt, to taste
- 1 clove garlic, crushed
- 1 cup sliced strawberries
- 1/4 cup lemon juice
- 1/2 cup filtered water
- 3 tablespoons honey
- 1/2 lemon, sliced
- 2 tablespoons Herbs de Provence
- zest from 1 lemon
Instructions
- Preheat oven to 400°F.
- Melt cooking fat in large cast iron or heavy duty pan, over medium heat.
- Sprinkle salt over chicken pieces.
- Add chicken pieces to pan, and brown on all sides (about 10 minutes).
- Add garlic to pan.
- Cook until fragrant (about 1 minute).
- Remove from heat.
- Add strawberries, lemon juice and water to pan.
- Stir.
- Pour honey over chicken and strawberries.
- Place lemon slices on top.
- Sprinkle on Herbs de Provence and small dash of salt.
- Add zest.
- Place pan in oven and bake for 35 to 40 minutes, or until cooked through.
- Remove from heat.
- Serve immediately, or allow to cool before storing.
