Hmm, so how long has it been since I’ve had real tomato sauce chili? Um, about three years ago! Despite chili being one of my favorite foods, I didn’t jump right into cooking up a big pot of it for me to enjoy. After almost two years of being on the AIP, I’ve taken my reintroduction of nightshades very slowly. The fact that chili usually contains lots of different nightshades, made it a complicated dish to reintroduce. In my version, I’ve decided to use only two nightshades, tomato sauce and chili powder. I also added the reintroduction of cumin. Lucky for me, I had no bad effects from my Easy Instant Pot Paleo Chili!

For most people with autoimmune disease, nightshades are the hardest foods to reintroduce. But, just to show you how different we really all are, I have been able to reintroduce most nightshades, but not black pepper. Black pepper is a stage 1 reintroduction! Most people can add it back into their diets with no problem. I’ve also been able to add dairy back into my diet, but not cooked broccoli. You see, everyone is different. You really have to take reintroductions slowly. One day, you may be able to enjoy chili, too!
Ingredients
- 1 pound ground beef
- 1 small onion, chopped
- 2 cloves garlic, chopped
- 4 carrots, chopped small
- 1 (15 ounce) can organic tomato sauce
- 1 tablespoon coconut aminos
- 2 tablespoons chili powder
- 1 teaspoon cumin
- 1 teaspoon sea salt
Instructions
- Place ground beef in inner pot of Instant Pot.
- Press Saute button.
- Brown ground beef.
- Add onions and garlic and cook for 5 minutes, stirring often.
- Press Off button.
- Add all other ingredients to Instant Pot.
- Close lid.
- Press Bean/Chili button.
- Allow to cook for pre-set time (30 minutes).
- When done cooking, press Off button.
- Let pressure release naturally for 10 minutes.
- Carefully, open lid.
- Stir.
- Serve.
