I discovered this recipe totally by accident.  I was trying to create a simple tropical inspired salad with the sashimi grade tuna I had just bought.  I wanted to stack the ingredients; but, I had nothing to use as a mold.  That’s when I decided to use a big, bpa-free plastic cup.  When I lifted the cup, after turning it upside down over the lettuce, I noticed a stack that reminded me of a volcano.  Boom!  This salad was born!

I’ve made it a few times since then.  It always gets rave reviews by guests.  They love the volcano look.  The last few times, I added beet root powder to the dressing.  It looks like lava coming down the volcano!  It’s unbelievably cool!

Salad

2 Ahi tuna steaks, cut into 1 inch chunks

1 large cucumber, diced

½ red onion, diced

2 medium ripe avocados, diced (peeled & pitted)

½ cup fresh cilantro, chopped

4 cups mixed greens

½ cup banana chips,Trader Joe’s Organic Banana Chipstuna Tropical Ahi Tuna Volcano Salad Recipe ir t boanmo05 20 l as2 o 1 a B0041PFFE6

1 handful Macadamia nuts, chopped, Raw Hawaiian Macadamia Nutstuna Tropical Ahi Tuna Volcano Salad Recipe ir t boanmo05 20 l as2 o 1 a B00C78BXUE

Dressing

2 Tbsp Coconut Aminos

1 Tbsp raw honey

2 Tbsp extra virgin olive oil

¼ cup fresh pineapple, lime, or mango juice

Dash salt & Pepper

1) Marinate Tuna chunks by placing ingredients in resealable bag or container.  Make sure tuna is covered in marinade.  Place container in fridge for 20 minutes to 2 hours.

2) To assemble salad, divide lettuce into 2 to 4 servings.   Basically, if you want two big salads, place lettuce on two plates; four, if you want four small salads.  In a medium bowl, mix together cucumber, red onion, and avocado.  Place mixture in a 12 ounce cup or mold. Press down lightly.  Add marinated tuna to cup or mold.  Press down lightly.  Place cup, upside down, over middle of lettuce.  Slowly lift cup, while guiding ingredients into dome shape.  Some of the ingredients will fall into lettuce.  That’s okay.  You want it to have the appearance of a crumbling volcano. Sprinkle Ahi volcano with sesame seeds and macadamia nuts.

3) Whisk together all dressing ingredients. Drizzle over Ahi volcano and salad greens. If you want to go super fancy, you can add a little beet root powder to the dressing.  That will make the dressing look like lava, coming down the volcano.  It’s pretty cool lookin’!

4) Enjoy salad and all the compliments you’ll receive!

Mardi Gras Pan Seared Tuna Recipe

Mardi Gras Ahi Tuna tuna Mardi Gras Pan Seared Tuna Recipe Mardi Gras Ahi Tuna 1024x811

Yay! I got the recipe to you in time for Friday’s dinner!  This is the dish I made for dinner last Friday.  Once it was plated, I came up with the name.  The Mardi Gras color scheme was purely by accident.  But, I thought it worked!  Enjoy!

Mardi Gras Seared Tuna

Ingredients

2 Sashimi grade Ahi Tuna Steaks

½ Head Purple Cabbage, sliced into strips

2 Zucchini, spiraled into noodles

1 handful fresh Cilantro, torn into pieces

1 Clove Garlic, chopped fine

2 Tbsp Coconut Oil, Nutiva Certified Organic Extra Virgin Coconut Oil — 54 fl oztuna Mardi Gras Pan Seared Tuna Recipe ir t boanmo05 20 l as2 o 1 a B000GAT6NG

1 Tbsp Fish Sauce, Red Boat Fish Sauce (8.45 ounce)tuna Mardi Gras Pan Seared Tuna Recipe ir t boanmo05 20 l as2 o 1 a B008W3KIAE

¼ Cup Coconut Aminos, Coconut Secret Raw Coconut Aminos — 8 fl oztuna Mardi Gras Pan Seared Tuna Recipe ir t boanmo05 20 l as2 o 1 a B00B8Z70AY

Dash of Garlic Powder

Salt and Pepper to taste (for AIP, skip pepper)

Heat 1 tablespoon of coconut oil in large pan over medium heat.  Once oil has melted, add zucchini noodles to pan.  Saute for 2 minutes, stirring constantly.  Add cabbage and garlic to pan and stir. Saute for another 2 minutes. Add fish sauce and half of coconut aminos to pan.  Allow to cook until cabbage is wilted, about 10 minutes.  While cabbage is cooking, season both sides of tuna with salt, pepper, and garlic powder.  Season cabbage and zucchini to taste.  When cabbage is wilted, remove from heat and plate.  Place pan back on burner with the other tablespoon of coconut oil.  Once oil is melted, place tuna steaks in pan.  Sear on one side, then flip.  Pour other half of coconut aminos over tuna.  Once that side of tuna is sufficiently seared, flip again.  Remove pan from burner.  Place tuna steaks atop cabbage and zucchini.  Sprinkle cilantro over dish.

Serves 2

Time Cook: 30 minutes

I just love the colors of this dish!  It makes a beautiful presentation. You can always cook the fish longer, if you like.  I like mine pretty raw.  Just be sure not to overcook them.  Lower your heat to be sure not to burn the outsides.
