Smothered Cabbage with Ground Beef

1 head Cabbage, shredded

1 pound Ground Beef

1 Onion, chopped

1 clove Garlic, chopped fine or crushed

½ cup Beef Broth, + more, if needed

3 slices bacon, cut into ½ inch pieces

Salt and pepper  ( omit pepper for AIP)

In dutch oven, or other heavy pot, begin browning bacon pieces on medium heat. When about halfway browned, add ground beef and onions.  Cook until all meat is browned and onions are clear. Lower heat.  Add cabbage, garlic, broth, salt and pepper.  Stir all ingredients together.  Cook, with lid on pot, until cabbage is wilted, adding small amounts of broth as needed to keep from drying out.  Typically, this will take 20 to 30 minutes.  When all cabbage is wilted, raise heat to medium, remove pot lid, and allow all liquid to be absorbed.  Continue to cook, stirring often, to brown and smother cabbage.  This should take about 10 minutes.  Remove from heat and serve immediately.
