Recently, I’ve really been trying to reintroduce more healthy foods into my diet. Now that I’ve learned to cycle my reintroductions with my hormones, I’m finding it easier to be successful. When creating this Instant Pot Meatball & Okra Gumbo recipe, I decided to reintroduce cooked tomatoes. Happily, it worked out for me! The next step is to make an actual tomato sauce; but, I’m not that brave yet.
Creating Instant Pot recipes is so much fun! I love taking foods that normally need hours to cook, and cooking them in less than an hour. Most are as easy as tossing all of the ingredients into the inner pot, setting to cook, and then, having a fully cooked meal in minutes. This recipe has quickly become one of my absolute favorites. It’s not a typical or classic gumbo recipe. I’ve actually never had a gumbo with meatballs in it. But, who doesn’t love meatballs? Putting them in a gumbo seemed like a natural progression in my recipe creation. Enjoy!
Be sure to omit the tomatoes, if you’re elimination phase AIP. I promise, it will still taste wonderful without them. I think you’re gonna love my Instant Pot Meatball & Okra Gumbo! I found it to be very helpful in teaching me to make reintroductions safely. Believe me, it’s not as easy as you think it’s going to be.
