
By now, I’m sure you’ve heard the news that white potatoes are now Whole 30 approved. I had actually re-introduced potatoes back into my paleo diet some time ago. I only include them once in a great while. But, in celebration of them making it into the paleo approved list, I created this yummy recipe with chorizo.
This recipe is in no way autoimmune compliant. Potatoes are still nightshades; and, chorizo most often contains nightshades.
Ingredients
- 1/2 red onion, sliced
- 1/2 pound gluten free chorizo
- 1 organic russet potato, shredded ( I use this)
- 1 cup sauerkraut, drained
- 1 green onion, sliced (green and white parts)
- salt & pepper, to taste
Instructions
- Heat large cast iron pan over medium heat.
- When pan is hot, add chorizo and red onion.
- Brown chorizo and onions, breaking apart chunks of chorizo.
- Once chorizo is lightly browned, add potatoes to pan.
- Brown potatoes while mixing all ingredients well.
- After browning potatoes, add sauerkraut, green onions, and salt/pepper.
- Mix well. Lower heat.
- Continue to cook until potatoes are cooked through, about 10 to 15 minutes.
- Remove from heat.
- Serve.
This Chorizo Hash tastes amazing with a fried egg on top! That’s my favorite way to eat it.
