By now, I’m sure you’ve heard the news that white potatoes are now Whole 30 approved.  I had actually re-introduced potatoes back into my paleo diet some time ago.  I only include them once in a great while.  But, in celebration of them making it into the paleo approved list, I created this yummy recipe with chorizo.

This recipe is in no way autoimmune compliant.  Potatoes are still nightshades; and, chorizo most often contains nightshades. 

Paleo Chorizo Hash Recipe

Prep Time: 15 minutes

Cook Time: 40 minutes

Total Time: 55 minutes

Yield: 2

Paleo Chorizo Hash Recipe

Ingredients

  • 1/2 red onion, sliced
  • 1/2 pound gluten free chorizo
  • 1 organic russet potato, shredded ( I use this)
  • 1 cup sauerkraut, drained
  • 1 green onion, sliced (green and white parts)
  • salt & pepper, to taste

Instructions

  1. Heat large cast iron pan over medium heat.
  2. When pan is hot, add chorizo and red onion.
  3. Brown chorizo and onions, breaking apart chunks of chorizo.
  4. Once chorizo is lightly browned, add potatoes to pan.
  5. Brown potatoes while mixing all ingredients well.
  6. After browning potatoes, add sauerkraut, green onions, and salt/pepper.
  7. Mix well. Lower heat.
  8. Continue to cook until potatoes are cooked through, about 10 to 15 minutes.
  9. Remove from heat.
  10. Serve.
