Cheezy Cauliflower Shirataki Noodle Bake

I am so excited to bring you this recipe!  When I created this recipe, I had never used Shirataki noodles.  I was kind of afraid of the flavor.  I don’t know why; but, I thought they would taste “fishy”.  While I don’t mind a little fishiness in my fish, I don’t really want it in my noodles.  I’m happy to report NO “fishy” flavor!

The creamy, cheezy flavor will make this dish one of your go-to comfort foods.

Plus, it can be made AIP by omitting the mustard and breadcrumbs (unless you use AIP approved paleo bread).  Also use coconut oil, in place of the butter or ghee.  You really won’t lose much of the flavor by leaving those ingredients out of the recipe.

Paleo “Cheezy” Cauliflower Shirataki Noodle Bake Recipe

Prep Time: 20 minutes

Cook Time: 43 minutes

Total Time: 1 hour, 3 minutes

Yield: 4 servings

Ingredients

Instructions

  1. Preheat oven to 350°F.
  2. Prepare Shirataki noodles according to package.
  3. Mix together riced cauliflower and noodles in large bowl.
  4. Add 1 tablespoon butter or ghee, garlic, mustard, and salt.
  5. Mix well.
  6. In small saucepan, over medium/low heat, whisk together coconut milk, coconut flour, and nutritional yeast.
  7. Heat until mixture begins to thicken, about 3 minutes.
  8. Pour liquid mixture into cauliflower/noodle mixture.
  9. Stir well.
  10. Pour into medium casserole dish.
  11. Sprinkle with bread crumbs.
  12. Dollop chunks of the other tablespoon butter or ghee over top.
  13. Place in oven and bake for 40 minutes.
  14. Remove from oven and allow to set for 5 minutes.
  15. Serve.
  16. To make breadcrumbs, toast paleo bread until crisp. Then, process in food processor. Voila, breadcrumbs!
  17. **For AIP, leave these ingredients out of recipe and replace ghee with coconut oil.**
