Paleo Bacon Spinach AIPizza with Arugula Pesto Recipe

A few nights ago, my hubby picked up one of those amazing Chicago deep dish pizzas for dinner.  I’d be lying if I said I didn’t feel jealous.  Lord knows, even one bite would have sent me into a serious health crisis.  I mean, gluten, dairy, and nightshades are basically what make up this amazing pizza pie.  That would not have worked for me at all.  So, I went to the kitchen, and cooked up my own amazing pizza pie, Bacon Spinach AIPizza with Arugula Pesto.

I wanted to try to improve upon my previously created AIPizza crust, so I added a couple of gelatin eggs and used cauliflower instead of plantains.  The texture was a bit fluffier; but, the flavor was just not as good as the original recipe.  I’m going to stick with the original recipe in the future.

Also, I craved a different taste than my AIPizza tomato-less sauce.  I created this Arugula Pesto instead.  That gave it a wonderful flavor that mingled well with the bacon and spinach.  After taking a bite, I wasn’t so jealous of my hubby’s pizza.

Now, I know it’s not so easy for some of you to pass on foods that are not good for you.  And, some people just don’t have the time to tinker around in the kitchen.  That’s why I try to do the tinkering for you.  I want to give you wonderfully tasty recipes that are AIP compliant.  Hopefully, this makes it easier for you to pass on foods that may not be beneficial to your healing.  I think you’ll really enjoy this AIPizza.

Paleo Bacon Spinach AIPizza with Arugula Pesto Recipe

Prep Time: 10 minutes

Cook Time: 25 minutes

Total Time: 35 minutes

Yield: 3 to 6 servings

Paleo Bacon Spinach AIPizza with Arugula Pesto Recipe

Ingredients

  • 1 prepared AIP Pizza Crust
  • 1/3 cup Arugula Pesto
  • 4 strips bacon, cut into strips
  • 1/2 red onion, sliced
  • 6 cups fresh spinach
  • 1 cup shredded zucchini cheese (optional)
  • Arugula Pesto
  • 4 cups arugula
  • 1 clove garlic
  • 1 tablespoon lemon juice
  • olive oil
  • salt, to taste

Instructions

  1. Make arugula pesto by adding first 3 ingredients to food processor Process on low, while adding olive oil, until you get desired consistency. You want it spreadable, not too oily. Add salt to taste. Set aside.
  2. Preheat broiler to high.
  3. Cook bacon strips in large skillet or saute pan, over medium heat.
  4. After 2 minutes, add red onion, and continue to cook until bacon is crisp and brown.
  5. Add spinach leaves and stir, coating with bacon grease.
  6. Cook until spinach is wilted, about 5 minutes.
  7. Remove from heat.
  8. Place prepared pizza crust onto baking pan or pizza stone
  9. Spoon and spread arugula pesto onto pizza crust.
  10. Spoon bacon and spinach mixture onto pizza crust.
  11. Sprinkle shredded zucchini cheese on top.
  12. Place in oven, under broiler, a little higher than the middle rack.
  13. Watch pizza closely. You should only need to broil it for 5 to 10 minutes.
  14. Once cheese is melted and pizza is heated through, remove from oven.
  15. Serve.
