Day Seventeen of The 21-Day Sugar Detox & Italian Style Broccoli Slaw with Salami Recipe

Wow, can you believe I only have 4 days left of The 21-Day Sugar Detox?  These seventeen days have flown by!  I am, however, already starting to plan my first day after the detox.  It definitely includes a gluten free beer!  It is Memorial Day, you know.  I have to celebrate in style.

Today, I have another easy, paleo lunch recipe for you.  This recipe can be made ahead of time, then, packed for lunch later.  It’ll last in the fridge for a couple of days. If you’re not keeping away from tomatoes, you can add some chopped tomatoes, too.  Believe me, I would add them, if I could.

Italian Style Broccoli Slaw with Salami

4 oz. salami, cut into bite-sized chunks

1 bag broccoli slaw

1 avocado, cut into small chunks

10+ green or black olives

2 stalks celery, sliced fine

½ red onion, chopped

¼ cup fresh parsley, chopped

2 tablespoons Balsamic Vinegar

2 tablespoons Mayonnaise

Salt and pepper, to taste

Combine all ingredients.  Mix well. Serves 2 to 4.

Lunch was a large bowl of my Italian Style Broccoli Slaw with Salami.  It was so good.  I served it alongside my green juice. Yummy!

Dinner was a plate of my Pan Seared Calf Liver with a side of “grits”.  I make my “grits” the same way I make my cauliflower rice, except I cook it in Coconut Milk and lots of butter or ghee .  It is so creamy and delicious.
