Today is the first day of winter! I don’t know about you; but, the first food I reach for, when it’s cold outside, is a big bowl of soup. This year, I’ve been giving my Instant Pot a workout, with tons of new soup and stew recipes I’ve created for you. My first recipe was Instant Pot Spiced Meatball Vegetable Soup!
This soup recipe actually came about by accident, as most of my recipes do. I wanted soup. I had leftover meatballs I needed to use. I only had a few vegetables I needed to use, before they spoiled. I had just soaked some beans. So, I put them all together, with some bone broth, herbs and spices, into my Instant Pot. I hit a couple of buttons. Thirty minutes later, I had a big pot of delicious soup.
Now, if you’re eating paleo, just leave out the potato and beans. Don’t have meatballs made, use any other type of meat you like. Don’t have the same vegetable around, use what you have. That’s the great thing about soup, it’s really hard to screw it up. With the particular herbs and spices I used, the broth will make any foods taste great.
