So, yes, I have officially added beans back into my diet. After successfully reintroducing kidney beans, I thought I’d give other beans a go. My first recipe is this one, Instant Pot Chicken with Black Beans and Gravy. I’m sure I’ll have have many more for you, as I expand my bean-eating experience.

Now, many of you may be wondering what the heck is going on with me. All of a sudden, I’m shunning paleo, AIP, and any other restrictive eating plan. That’s exactly what it is. I’m sick of all restrictive eating plans. I did my time on the AIP paleo. I was successful. Now, I just want to eat healthy, real food. It’s just that simple. It doesn’t mean that I want to go back to eating crap foods…EVER. I honestly have no desire to eat processed, GMO-filled, pesticide-laden foods. But, I do want to eat foods I know are good for me and my body. Foods like beans, properly processed grains, quality dairy, oats, and a variety of healing herbs and spices, are often shunned by restrictive eating protocols. If I can maintain my good health while eating these foods, and maybe even improve upon it, why would I not enjoy these foods. It’s actually quite ridiculous for me not to.
Ingredients
- 3 strips bacon, sliced
- 1 onion, chopped
- 4 pounds boneless, skinless chicken pieces, cut into 2” slices
- 2 cloves garlic, minced
- 2 cups chicken or bone broth
- 1 pound (16 ounces) black beans; soaked, rinsed and drained
- 2 bay leaves
- 1 tablespoon cumin
- 1 tablespoon garam masala
- 1/2 teaspoon sea salt
- 2 tablespoons arrowroot starch, dissolved in 1/4 cup filtered water
Instructions
- Place bacon strips into inner pot of Instant Pot.
- Press “Saute” button.
- Cook until bacon starts to brown, about 10 minutes.
- Add onion and stir.
- Cook for another 7 minutes.
- Add chicken and garlic.
- Cook for 10 minutes, stirring frequently.
- Press “Off” button.
- Add broth, beans, bay leaves, cumin, garam masala, and salt.
- Close lid.
- Press “Poultry” button.
- Press “+” button, until cook time reads 20 minutes.
- Allow to cook.
- When cooking is complete, press “Off” button.
- Allow pressure to release naturally, for 10 minutes.
- Carefully, remove lid.
- Press “Saute” button.
- Add arrowroot starch dissolved in water.
- Stir well.
- Allow gravy to thicken.
- Once gravy has thickened, press “Off” button.
- Serve.
