Day Sixteen on The 21-Day Sugar Detox & Easy Paleo Salmon Salad Recipe

Today, I’m feeling much better.  I’ve made up my mind to continue on The 21-Day Sugar Detox.  I have no idea what made my symptoms act up; but, whatever it was, it’s gone now.  Aah, the joys of autoimmune disease.

What did I eat on day 16 of The 21-Day Sugar Detox?

Lunch was some leftover salmon salad over a bed of butter lettuce.  On the side, I had my go-to green juice.  I don’t know what it is about this juice that just makes me feel healthier after I drink it.  It’s great for the gut and kidneys. You can find the recipe below, along with my easy salmon salad recipe.

Easy Paleo Salmon Salad

1 can Wild Alaskan Pink Salmon, Boneless & Skinless,

1 tablespoon Paleo Organic Mayonnaise

1 stalk celery, chopped

1 cucumber, chopped

1 egg, medium boiled, chopped

1 avocado, peeled, pitted, and chopped

1tablespoon vinegar of your choice (I used red wine vinegar)

Salt & pepper, to taste

Combine all ingredients and mix well.  Enjoy over lettuce, in a Mikey’s Muffin, or in a Paleo Wrap!

Go-To Green Juice

2 large handfuls kale

2 organic carrots

1 green apple

1 cucumber

1 stalk celery

Add all ingredients to Juicer.  Enjoy!

AIP Paleo Fish Tacos Recipe

For dinner, I wanted something that wouldn’t irritate my symptoms again. I chose my AIP Fish Tacos.  I thought it was best to play it safe.

Overall, today was not too exciting.  That was nice after yesterday’s mad pace.  I’ll be back tomorrow with more goodies for you.
