Only a few days left of Lent. Some of us will be celebrating Easter on Sunday. I will be celebrating with a very small AIP meal, and a bunch of AIP treats! See, I gave up all AIP treats for Lent. Then, all my creative AIP blogger buddies began posting a huge array of beautiful, delicious looking treats every day. I now fully understand what sacrifice is.
Our Easter is actually going to be pretty quiet. We’re going to my in-laws on Saturday; so, they can celebrate Easter as a family. I’m just going to be supportive, as I refuse to celebrate any Christian holiday on a different day than it’s intended day. So, I’m going to be bringing my own meal to the family get-together. I think I’m just going to pack some soup. Usually, every dish on the table has tons of gluten, grains, and nightshades as ingredients. The chance of cross-contamination is very high! To be safe, I bring my own food, plate or bowl, and silverware. I don’t take any chances.
On Easter day, we will attend church. Then, it’s home to begin the AIP treat fest! Here are the treats I plan to make and devour:
Salted “Chocolate” Cream Pie from Grazed and Enthused
Carrot Cake Cupcakes with Creamy Maple Frosting from Sweet Potatoes and Social Change
Rose and Cinnamon Coconut Panna Cotta from It’s Me Charlotte
Strawberry Balsamic Ice Cream from Autoimmune-Paleo
Coconut Cream Pie from the He Won’t Know It’s Paleo Cookbook
“Soft Serve” Sundae with Salted Caramelized Plantains from the Nourish Cookbook
Okay, so maybe I won’t be able to make and eat all of these in one day. But, rest assured, I will over the next few months. I’m not changing my stance on keeping AIP treats to a minimum. It just so happens, I have lots of celebrations happening over the Spring and Summer months. That’s why it was probably good for me to give up AIP treats for Lent.
