It’s been an entire week since I began The 21-Day Sugar Detox. Today was weigh-in day. Since I’m trying to maintain my weight and not lose it, I was happy to see that I’d only lost a pound. I’ve been keeping my good fat levels high. It seems to be working.

Before I get into what I ate today, I’d like to announce and awesome giveaway. A few weeks ago, when I attended the Gluten & Allergen Free Expo, I met Michael, the creator of Mikey’s Muffins. These are paleo friendly English-style muffins. These frozen muffins are made with very few ingredients. They are available online, in three flavors; Original, Toasted Onion, and Cinnamon Raisin. I’m also working with Michael to get a coupon code for you to save some cash when ordering. I should have that worked out by the end of the week. Tonight, I tried the Toasted Onion muffin. I only ate half because I didn’t want to stray too far from my detox. The only ingredient that is a little iffy is the baking powder. It’s usually acceptable as paleo; but, not on The 21-Day Sugar Detox. However, testing products is a big part of my business. A girl’s got to eat you know, so to speak. So, in the name of business, I sampled. The texture of Mikey’s Muffins is quite delightful. The flavor is pretty amazing. Considering these muffins are paleo, I found myself very impressed. I ate mine plain; but, the addition of a little grass fed butter, would have been awesome. I would absolutely recommend these muffins. Whether plain or slathered, they pass my taste test. I’ll be posting the ingredients and other information about Mikey’s Muffins in every post this week. If there is a particular question you’d like answered, please add it to the Comments. I will answer all questions. Now, what did I eat today on The 21-Day Sugar Detox? Lunch was lettuce leaves filled with leftover shredded rib roast and AIP guacamole. I also made a nutritious juice with kale, green apple, carrots, and celery. Healthy and delicious!

Dinner was Applegate Chicken Sausages with Kale, Bacon, & Sauerkraut Hash. It was divine. Recipe is below.

Chicken Sausage with Kale, Bacon & Sauerkraut Hash
1 package Chicken Sausage ( 4 links)
4 slices Bacon, cut into 1″ strips
1/2 Red Onion, sliced
2 cups Kale
3 cups homemade or jarred Sauerkraut, drained
1/4 tsp. salt
Place bacon in skillet and begin browning. Once bacon has created about a little grease, add onion and kale to skillet. Saute until onions are clear and bacon is browned. Add sauerkraut to skillet and saute for 5 minutes more. Add sausages to skillet, lower heat, and cook until they are heated through. Remove from heat. Serve immediately.

Love your meals….that juice with kale, green apple, carrots, and celery is my go to juice…love the flavor.
So these muffins are like english muffins? that’s pretty awesome, I miss the taste of muffins since going paleo, I love the idea of added flavorings so a little butter ontop would be delish. I have yet to do the 21 day sugar detox, as I have to cook for 4 kids but some of the meals that I’ve seen look so delicious. I would like to try sometime however I”m not too bad with sugar addiction.

I know how difficult it can be to go paleo while feeding a family of non-paleos. I make three different meals every night (LOL!). That’s why I find it easier to cook enough for a few meals, and then freeze portions for later. Otherwise, I think I’d go nuts.
