Whether you’ve been following the AIP for awhile now, or you’re just thinking of starting your AIP journey, you are always in search of delicious recipes and quality information to help you through this sometimes confusing protocol.  Today, I’d like to introduce you to the latest addition to my AIP library, Simple French Paleo, by Sophie Van Tiggelen.

I had the pleasure of meeting and hanging with Sophie at last year’s Paleo Fx.  During our time together, Sophie talked of her dream of putting together a French themed, AIP cookbook.  To see her dream become a reality is a testament to this amazing lady’s dedication and belief in the autoimmune protocol. Like me, she has seen the improvements to her health adherence to the AIP has given her.  Her love of simple, real food flavors and her desire to help others experience healing, seeps through every page of Simple French Paleo. 

I’m not going to spend a lot of time discussing Sophie’s journey dealing with Hashimoto’s. Instead, I’m going to encourage you to go to her site, A Squirrel In The Kitchen.

Simple French Paleo is so much more than a mere cookbook.  Sophie has provided us with a practical guide to maneuvering through the AIP. I found her descriptions of the different phases of the AIP to be one of the easiest to understand and relate to I have ever read. You’ll also get lists of foods to eat and avoid and tips on living the whole AIP lifestyle.  Simple French Paleo includes an incredible amount of information on all aspects of the AIP life.

Now, let’s move on to the food! It was very hard for me to pick one favorite recipe to share with you. Believe me when I say they’re all fantastic.  But, of course, I had to go for her Grilled Shrimp with Aioli.  The fact is, her entire seafood section is my favorite.  Second favorite would have to be her dessert section, which is absolutely to die for…..or, to live for!  She has a recipe for a crepe cake that will make your head spin. And, IT’S ALL AIP!

Grilled Shrimp with Aioli

Prep Time: 15 minutes

Cook Time: 4 minutes

Total Time: 19 minutes

Yield: 4 servings

Ingredients

  • 16 extra-large fresh shrimp (about 3⁄4 pound), deveined and peeled, with tails on
  • 2 tablespoons extra-virgin olive oil 1 teaspoon dried thyme
  • 1∕8 teaspoon fine sea salt
  • 1 cup Aïoli- see recipe below

Instructions

  1. Set the oven broiler to high. Set the rack five inches below heating element.
  2. Rinse shrimp and pat dry.
  3. Combine shrimp, olive oil, thyme, and sea salt in a bowl. Mix well.
  4. Arrange shrimp in a single layer on a baking sheet and broil until shrimp turn pink, about two minutes each side.
  5. Serve shrimp hot or cold with aïoli.

Notes

Aioli Recipe 1∕3 cup avocado oil 1⁄2 cup palm shortening 3 cloves garlic, minced, or 1⁄2 teaspoon garlic powder 1 tablespoon lemon juice 1⁄4 teaspoon fine sea salt 1. Combine all ingredients in a tall, narrow container and mix thoroughly with an immersion blender. (You can also do this in a food processor.) Check seasoning and adjust salt to taste. 2. Store in an airtight glass container in the refrigerator. For a creamier consistency, remove from the refrigerator 20 minutes before serving.

Will keep in the refrigerator, sealed in an airtight container, up to 7 days.
