So, I’m sure you’re all getting ready for your Thanksgiving feast. If you’re like me, you may have guests/family, in from out of town. My two sisters, brother-in-law, and little nephew are all coming to celebrate Thanksgiving with me. I’ll actually be cooking for eight people this year. To be sure I don’t spend all my valuable time in the kitchen, instead of catching up, I plan to make a few dishes ahead of time. This Breakfast Sausage and Spinach Quiche is one of them.

I tested this recipe a few weeks ago; and, it held up really well. I was able to refrigerate, reheat, and even freeze it, with no problem. That makes it the perfect dish to serve my guests for breakfast. It also packs well; so, if you’re traveling, you could easily bring it with you.
Ingredients
- 2 tablespoons cooking fat (ghee, coconut oil, etc.), melted and divided
- 1 large white sweet potato, peeled and shredded fine
- 8 cage free eggs
- 1/2 pound pork breakfast sausage, cooked
- 2 cups fresh spinach
- 1/2 teaspoon salt
- 1 tablespoon dried basil
- 2 tablespoons feta (optional)
Instructions
- Preheat oven to 350° F.
- Pour 1 tablespoon melted cooking fat into 10 inch, round baking dish.
- Mix remaining tablespoon cooking fat into shredded sweet potato.
- Firmly press sweet potato mixture into bottom of baking dish, to form crust.
- Place in oven and bake for 10 minutes.
- Remove from oven and set aside to cool.
- Whisk eggs in medium mixing bowl.
- Add breakfast sausage to eggs and mix well.
- Add spinach and mix well.
- Add salt and basil. Stir.
- Pour egg mixture into baking dish, over crust.
- Drop in feta, over egg mixture.
- Place in oven and bake until cooked through, about 30 minutes.
- Remove from oven.
- Let cool for 5 minutes.
- Slice and serve.
