This year has been a big one, here at Paleo Cajun Lady, and for myself, personally. I’ve had the honor of my AIP recipes featured in The Best of AIP cookbook, Paleo Living e-magazine, Paleo Magazine’s Holiday Cookbook, and one of Chris Kresser’s Weekly Round-ups. I traveled to Paleo FX, where I met some new friends, and hung out with a few old friends. I published my first e-cookbook, AIP Paleo Cajun Cookbook, which was part of the AIP Wellness Bundle. I did interviews with The Autoimmune Connection, Lupus Chick, Comfort Bites, A Squirrel In The Kitchen, Healing Family Eats, Beyond The Bite, The Nourishing Podcast, and many others in the autoimmune community. And, let’s not forget, I put my lupus and psoriasis into full remission!

To say I’m grateful to all of you, for being a part of this amazing journey, is an understatement. Without you, none of this would have been possible. I am truly thankful to each and every one of you. I hope you have enjoyed my recipes and stories about my journey. I can’t wait to bring you even more in the new year.
Here is my recipe roundup of the best of 2015 AIP by Paleo Cajun Lady:

Pizza Crust and Instant Pot Pizza Sauce
Roast Beef with Cabbage Steaks
Instant Pot Pina Colada Chicken
Green Onion-Sage Pork Meatballs with Cranberry-Fig Dipping Sauce
Instant Pot Blackberry-Balsamic Chicken
One Pot Cranberry Apple Chicken with Cabbage
This has been a year filled with many celebrations and delicious dishes; and, I believe next year will be even better!
I’d like to wish all of you a merry Christmas and happy holidays! I will be running Paleo Cajun Lady on autopilot until the end of the year. You can still connect with me on social media; but, I won’t be as active as I usually am. I’ve got lots to do to get ready for the new year!
As always, I wish you good health…..and, good food!
