One of the foods I miss the most, since going nightshade free, is spaghetti sauce. I’ve been able to add back most nightshades; but, not tomatoes.  It’s hard to do without some of my favorite foods like paleo pizza, lasagna, and chili.  Poor me.

Then, I saw a couple of recipes for tomato-less sauces, using beets.  I’d have to say, I was more than a little skeptical.  One of the recipes didn’t seem to have enough ingredients to cover the beet flavor.  The other recipe used wine, which I preferred not to use, due to nitrates.  I wanted a recipe that was as autoimmune friendly as possible.  So, I decided to create one.

This recipe is the result of my efforts.  I made it completely AIP compliant.  The best part….IT TASTES FANTASTIC!  I didn’t even taste the beets at all.  It’s like they absorbed the flavors of the beef, herbs, and garlic.  I think you’ll really love it.  Even I was surprised at how tasty it was.

AIP Tomato-less Bolognese Sauce Recipe

Prep Time: 20 minutes

Cook Time: 1 hour, 30 minutes

Total Time: 1 hour, 50 minutes

Yield: 4-6


  • 4 stips bacon, cut into 1” strips
  • 1 lb. grass fed ground beef
  • 1 sweet onion, chopped
  • 2 carrots, chopped
  • 1 stalk celery, chopped
  • 2 roasted beets, chopped fine
  • 1 large zucchini, chopped
  • 1 cup sliced mushrooms
  • 5 cloves garlic, crushed
  • 1 cup fresh basil, chopped
  • 3 cups organic chicken broth
  • 1 bay leaf
  • 1 tbsp. dried oregano
  • 1 tsp. apple cider vinegar
  • 1 tbsp. balsamic vinegar
  • 1 tbsp. Coconut Aminos
  • salt, to taste


  1. Brown bacon in large enameled cast iron pot over medium heat.
  2. Once bacon is browned, add ground beef and brown.
  3. Add onions, carrots, and celery.
  4. Wilt vegetables.
  5. Add beets, zucchini, mushrooms, and garlic.
  6. Stir.
  7. Place lid on pot and smother vegetables for 30 minutes.
  8. After 30 minutes, remove lid and add remainder of ingredients.
  9. Continue to cook, without lid, for another 30 minutes.
  10. Sauce will thicken.
  11. If you prefer a thinner sauce, add more chicken broth.
  12. Serve over zoodles or spaghetti squash.
