This is very possibly my favorite recipe I’ve ever created, Strawberry-Balsamic Chicken! Not only is it easy to cook, but it’s also really, really tasty. And, it all cooks up in just 30 minutes!

You’ll love the flavors of the sweet and tart strawberries and balsamic vinegar reduction, mixed with the mild taste of the crispy chicken. It’s the perfect end of summer meal. I served mine with a baked sweet potato, with a little sauce on top. It was pretty amazing, if I do say so myself. I’ve used drumsticks, chicken breasts and thighs to make this dish. It’s come out tasting fabulous each time. I do like to use skin-on chicken pieces. Otherwise, you won’t get that crispy deliciousness. But, it does still taste really good!
Ingredients
- 1 tablespoon cooking fat
- 5 to 6 chicken pieces (must all fit into 1 large cast iron pan)
- salt, to taste
- 1 tablespoon honey
- Strawberry-Balsamic Reduction
- 1 pint organic strawberries, stems removed and sliced
- 2 tablespoons balsamic vinegar
- 1/4 cup water
- 2 green onions, sliced
- 1 clove garlic, chopped
- 2 tablespoons honey or maple syrup
- juice from 1/2 lemon (about 1 tablespoon)
- pinch salt
Instructions
- Preheat oven to 400° F.
- Melt cooking fat in large cast iron pan, over medium heat.
- Sprinkle salt onto chicken pieces.
- Lay chicken pieces, skin side down in melted fat.
- Cook until skin is golden and crispy, about 3 minutes.
- Flip chicken pieces over and cook for another 3 minutes.
- Remove from heat.
- In a small saucepan, combine ingredients for Strawberry-Balsamic Reduction.
- Bring to a boil, over medium heat.
- Reduce heat to medium/low.
- Continue to cook for another 5 minutes.
- Remove from heat.
- Pour reduction over chicken pieces.
- Drizzle honey over chicken pieces.
- Place cast iron pan in oven and bake for 30 minutes, or until internal temperature of chicken reaches 160° F.
- Remove from oven.
- Serve chicken pieces topped with Strawberry-Balsamic Reduction.
