This AIP Paleo Slow Cooker Sage Chicken with Mushroom and Herb Gravy Recipe  is pretty easy to create, even if you’re not that into cooking.  Most of the cooking happens in the slow cooker.  So, you can just set it, and go on with your busy life.  I used organic free range chicken thighs, ordered through Door To Door Organics Chicago.  You could use whichever pieces and parts you prefer, just keep it to about 2 pounds of chicken.  Enjoy!

AIP Paleo Slow Cooker Sage Chicken with Mushroom and Herb Gravy Recipe

Prep Time: 30 minutes

Cook Time: 4 hours

Total Time: 4 hours, 30 minutes

Yield: 2 servings

Serving Size: 2 thighs, 1/2 cup vegetables

AIP Paleo Slow Cooker Sage Chicken with Mushroom and Herb Gravy Recipe

Delicious and easy meal. Tender chicken flavored with hints of sage, garlic, and mushrooms served with vegetables and a tasty herb gravy. Great paired with your favorite paleo mash.

Ingredients

Instructions

  1. Rinse, pat dry, and salt chicken thighs.
  2. Heat bacon grease in large skillet over medium heat.
  3. Once skillet is hot, place chicken, skin side down in skillet.
  4. Cook for about 5 minutes, or until skin is golden and crispy.
  5. Flip thighs over.
  6. Cook for another 2 minutes.
  7. Remove from heat and set aside.
  8. Place all vegetables and herbs into slow cooker
  9. Add lemon juice, coconut aminos, chicken broth and salt.
  10. Lay chicken thighs, along with any drippings, on top of vegetables, in slow cooker.
  11. Place lid on slow cooker.
  12. Set on low and cook for 4 hours.
  13. Remove chicken and 1 cup of cooked vegetables.
  14. Set aside.
  15. Make gravy.

Notes

For Gravy: Skim off top layer of fat from surface of drippings in slow cooker. Discard fat. Pour drippings into blender and puree until smooth. Pour into medium saucepan. Heat over medium/high heat. Bring to a low boil. Sprinkle in arrowroot starch, while stirring. Cook until thickened to gravy consistency. Remove from heat. Plate chicken and vegetables. Pour gravy over chicken and vegetables.
