Most of you know, shrimp and okra gumbo is a staple of any Cajun cook’s menu plan. This simple recipe uses browned vegetable to create a roux, instead of flour. The trick is to brown the vegetables, without burning them. You definitely want to keep your eye on them. You can always add more chicken broth, in small amounts, if you feel your veggies are burning instead of browning. They should smell fragrant, not burnt. My AIP Paleo Shrimp and Okra Gumbo recipe is completely AIP and TPA (The Paleo Approach) compliant. I think I made my Cajun ancestors proud.
My Shrimp and Okra Gumbo is perfect for those chilly days! It will warm you up in a comforting Cajun way.
Ingredients
- 1 tablespoon coconut oil or animal fat
- 1 medium onion, chopped (about 1 cup)
- 1 stalk celery, chopped (about 1/4 cup)
- 1 pound (16 ounces) fresh okra, sliced
- 1 cup (8 ounces) chicken broth
- 1 pound (16 ounces) shrimp, rinsed, peeled, and deveined
- 1 quart water
- 2 large cloves garlic, whole, peeled
- salt, to taste
Instructions
- In a heavy bottomed pot, melt fat over medium heat.
- Add onions and celery.
- Cook, while stirring, for 5 minutes.
- Add okra.
- Lower heat and cook for 15 minutes.
- Vegetables should be lightly browned.
- Add chicken broth.
- Replace lid on pot and continue to cook for 25 minutes, or until okra is soft.
- Remove lid and add shrimp, water and garlic.
- Bring to a boil.
- Cook for 30 minutes.
- Mash garlic cloves into gumbo.
- Add salt to taste.
- Serve.

You can serve my AIP Shrimp and Okra Gumbo with cauli-rice for a real Cajun experience.

I’ve been dealing with a lot of brain fog lately, as I experience a full blown flare. This flare has been caused, no doubt, by recent events that are completely out of my control.
