AIP Paleo Roasted White Sweet Potatoes with Dill Recipe

There’s no denying it, batch cooking is a lifesaver when you’re on the AIP.  No matter how busy I am, I always make time to batch cook my foods for the week.  At times, I have my Instant Pot, slow cooker, oven, and toaster oven, all going at the same time.  This recipe for Roasted White Sweet Potatoes with Dill is one of my favorite go-to batch cooking recipes.

AIP Paleo Roasted White Sweet Potatoes with Dill

White sweet potatoes can be very difficult to find, in some areas.  Only one grocery store near me sells them.  You can usually find them at an Asian grocer.  I can tell you, they are definitely worth finding!

AIP Paleo Roasted White Sweet Potatoes with Dill Recipe

Prep Time: 10 minutes

Cook Time: 45 minutes

Total Time: 55 minutes

Yield: 4 servings

AIP Paleo Roasted White Sweet Potatoes with Dill Recipe


  • 2 to 3 white sweet potatoes, cut into home fries
  • 2 tablespoons olive oil
  • 1/4 cup chopped fresh parsley
  • 1 tablespoon chopped fresh dill
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt


  1. Preheat oven to 375°.
  2. In a large mixing bowl, toss together all ingredients.
  3. Lay potatoes on baking sheet, lined with parchment paper.
  4. Put in oven and roast for 25 to 30 minutes, until bottoms are browned.
  5. Flip fries over.
  6. Bake for another 10 to 15 minutes, until cooked through.
  7. Serve.

I hope you enjoy my Roasted White Sweet Potatoes with Dill recipe.  The combination of sweet and dill flavors are so refreshing.  As we move into Fall, I like to combine flavors of the passing season with flavors of the new season.  I think this recipe does exactly that.

I just switched out my wardrobe to my Fall wear.  I know a lot of people are embracing the capsule wardrobe.  While, for some, I can see how it’s a good idea.  But, for me, it’s just not something I want to do.  I sift through my wardrobe every season, and donate the clothes I haven’t worn, or that don’t fit.  I just can’t see how whittling what’s left down to sixteen or so pieces could ever make me happy.  I love clothes!
