AIP Paleo Pork Belly Fried Rice

One of the foods I miss the most, since going on the AIP, is BBQ Pork Fried Rice from my local Chinese restaurant.  It was one of my absolute favorite foods. I vowed to create an AIP compliant  fried rice that would be similar in flavors.  I believe I’ve finally done it with my AIP Paleo Pork Belly Fried Rice recipe.

When I visited my local butcher, he alerted me to some pastured pork belly he had just received from a local farm.  I immediately bought every single piece.  That’s right, I cleaned him out.

Once home, I had to figure out what I was going to do with all that pork belly.  That’s when my AIP Paleo Pork Belly Fried Rice recipe was born.

Since I like my pork belly crispy, I decided to roast it first.  This is my recipe for AIP Crispy Pork Belly:

2 pounds pork belly, divided into 4 pieces
salt, garlic powder and onion powder

Preheat oven to 425°. Sprinkle pork belly with salt, garlic and onion powder on all sides. Place pork belly, skin side up, on elevated rack, in baking dish or pan (should be at least 1” deep). Bake for 1 to 1 1/2 hours or until skin is crispy. Remove from oven and allow to cool before cutting. Reserve 1 tablespoon drippings for AIP Paleo Pork Belly Fried Rice recipe.

This is a quick and easy recipe.  And, it doesn’t hurt that it tastes amazing! Enjoy!

AIP Paleo Pork Belly Fried Rice Recipe

Prep Time: 20 minutes

Cook Time: 20 minutes

Total Time: 40 minutes

Yield: 4 servings

Serving Size: 1 cup

AIP Paleo Pork Belly Fried Rice Recipe

Ingredients

  • 1 pound roasted pork belly, cut into 1/2 inch slices
  • 1 tablespoon reserved pork belly drippings
  • 1 cup chopped onion (1/2 large onion)
  • 1/2 cup chopped carrots (2 small carrots)
  • 4 ounces water chestnuts (1/2 an 8 ounce can), roughly chopped
  • 3/4 cup chopped green onions (4 green onions), green parts only
  • 1/4 cup coconut aminos
  • 1 teaspoon fish sauce
  • 1 clove garlic, minced
  • 3 cups cauliflower rice (1/2 head)
  • 1/2 cup chicken broth
  • salt, to taste

Instructions

  1. Heat pork belly drippings in wok or large cast iron skillet, over high heat.
  2. When oil is very hot, add onion.
  3. Cook and stir until onions are browned.
  4. Add carrots, garlic and water chestnuts.
  5. Stir well.
  6. Cook for 2 minutes.
  7. Add roasted pork belly and stir.
  8. Fold in cauliflower rice.
  9. Stir well, mixing ingredients.
  10. Add chicken broth, coconut aminos and fish sauce.
  11. Mix well.
  12. Cook until all liquid has been absorbed, about 5 minutes, stirring frequently.
  13. Remove from heat.
  14. Add green onions and stir.
  15. Serve immediately.
  16. Can be refrigerated or frozen.

Notes

Be sure to roast your pork belly before you begin this recipe.
