AIP Paleo Mini Meat and Veggie Loaves Recipe

I wanted to share a quick and easy recipe today.  My AIP Paleo Mini Meat and Veggie Loaves recipe is delicious and nutritious. It’s completely AIP and TPA (The Paleo Approach) compliant.  Plus, it’s a great way to sneak some healthy vegetables into your picky eater’s meal.

You can add these AIP Paleo Mini Meat and Veggie Loaves to your batch cooking roundup.  They can be individually wrapped and frozen.  Then, simply thaw and reheat.  I usually thaw mine in the fridge overnight.  When I’m ready to reheat, I wrap my loaf in parchment paper and place in my toaster oven, at a temp of 375 degrees, for about 20 minutes.

Feel free to substitute other meats or veggies in your AIP Paleo Mini Meat and Veggie Loaves.  Ground Bison, pork, turkey, or lamb would make flavorful substitutes.  For different vegetables, you could use ground carrots, turnips, or spinach.  Just be sure the veggie you choose doesn’t contain too much liquid.  For example, you wouldn’t want to use celery or cucumber,  It’s better to use more starchy vegetables.

 

 

AIP Paleo Mini Meat and Veggie Loaves Recipe

Prep Time: 20 minutes

Cook Time: 30 minutes

Total Time: 50 minutes

Yield: 4 loaves

AIP Paleo Mini Meat and Veggie Loaves Recipe

Ingredients

  • 1 pound ground beef
  • 1 cup chopped mushrooms
  • 1 cup chopped kale
  • 2 tablespoons crushed garlic
  • 1 tablespoon Coconut Aminos (optional)
  • 1/2 cup chopped fresh basil
  • 1/8 teaspoon salt

Instructions

  1. Preheat oven to 375° F.
  2. Combine all ingredients.
  3. Mix well.
  4. Form mixture into 4 individual mini loaves.
  5. Lay each mini loaf on baking sheet, lined with parchment paper
  6. Place baking sheet in oven and bake until internal temperature of loaves reaches 160 degrees, about 30 minutes.
  7. Remove from oven.
  8. Serve immediately.
