While I was vacationing at La Quinta Resort & Club, in California, I had the pleasure of dining at Morgan’s In The Desert. Morgan’s is an upscale, farm to table restaurant, home to chef Jimmy Schmidt, a pioneer of the farm-to table movement, and three time winner of the James Beard award.
One of the delectable dishes I enjoyed was his beet soup. The flavors were reminiscent of my very own Basic Tomato-less Sauce, which you can find the recipe in AIP Paleo Cajun Cookbook and Sickness To Fitness Quick Start Guide.
Of course, being the home chef that I am, I had to try to duplicate the recipe for the beet soup, but with a few twists of my own. The following recipe is what I came up with.
