AIP Paleo Ground Lamb with Yellow Squash Recipe

This recipe for Ground Lamb with Yellow Squash was first released in my newsletter a couple of weeks ago.  I hadn’t intended on sharing it here on the blog; but, I had so many request for it in a printable form, that I decided to share it with you here.

It’s a really easy to cook recipe with tons of variations.  You could always use ground beef, turkey, bison, or pork, instead of the lamb.  And, if you don’t have yellow squash, you could use zucchini, butternut, or any other squash you have on hand.  That’s the great thing about this recipe! Plus, it’s really quick to cook up when you’re in a hurry.  The kiddies are going back to school this month; so, schedules are going to become tight again.  The ability to cook a wholesome, fast meal is both healthy and necessary. And, since you only use one skillet, there are less dishes to clean up!

AIP Paleo Ground Lamb with Yellow Squash Recipe

Prep Time: 15 minutes

Cook Time: 20 minutes

Total Time: 35 minutes

Yield: 4 servings

AIP Paleo Ground Lamb with Yellow Squash Recipe


  • 1 pound ground lamb
  • 1 small onion, quartered
  • 1 clove garlic, chopped
  • 3 yellow squash, halved lengthwise, then sliced
  • 1/4 cup chicken or bone broth
  • 1 tablespoon each oregano and thyme
  • salt, to taste


  1. Brown ground lamb in large pan or cast iron skillet, over medium heat. 
  2. Add onions and garlic. 
  3. Cook for two minutes, while stirring.
  4. Add squash and stir. 
  5. Cook for 3 minutes.
  6. Add broth, herbs and salt. 
  7. Cook until all liquid is absorbed and squash is cooked through, about 15 minutes.
  8. Remove from heat. 
  9. Serve.

  1. As always I have all of the ingredients on hand and am overrun with the squash in my garden. This will be a nice easy dinner for myself and the hubs. Started the day at 6 a.m. with a 45 minute work out and I’ve been on the move ever since, including preparing 2 quarts of sauerkraut to ferment and chopping enough veggies for salad for the next few days. Hope you’re having a fabulous day.

    1. That’s what I’m hearing from so many people! I think the squash are taking over everyone’s gardens. I have tons of zucchini and yellow squash in the house.
