
I first made this fried “rice” to serve with these delicious Garlic Chicken Livers. It turned out so good, I now make as a meal on it’s own. Plus, it’s AIP Paleo which makes it even better.
AIP Paleo Green Onion Bacon Fried Rice
1/2 Head cauliflower florets
2 Slices Bacon (be sure to get AIP paleo approved sugar free bacon), cut into 1/2 inch pieces
3 Green Onions, chopped, green and white
1 Tbsp Coconut Aminos,buy here
2 Tbsp Chicken broth, buy here
Sea Salt to taste
Brown bacon pieces in a medium skillet on medium/low heat. As bacon is browning, rice raw cauliflower in food processor by pulsing until it has a rice-like consistency. Add green onion to skillet when bacon is 75% browned. Brown for 1 minute. Reduce heat. Add cauliflower rice, Coconut Aminos, and chicken broth to skillet. Stir well, to be sure to mix in all little brown bits from skillet. Saute until all liquid is absorbed, about 5 minutes. Give it a good stir to mix. Salt to taste. Remove from heat. Serve immediately.

Cook Time: 20-25 minutes
Serves 4 (or 2 hungry people, or 1 very hungry person)
This is such an easy recipe. Sometimes, I make a big bowl of it, and just sit and eat the whole thing. And, if you like chicken liver, be sure to check out the link above. These livers are the most delicious I’ve ever eaten. The only change I made, was to add the garlic to the skillet for about a minute before serving. I’m not a fan of raw garlic. But, if you are, by all means, go for it.
