It’s hard to believe it’s been six months since I released my first e-cookbook, AIP Paleo Cajun Cookbook. I’m so thrilled every time I see one of you post the dishes you’ve cooked, using my recipes. I set out to prove you could have flavorful, delicious foods, even on the AIP. With my cookbook, and the recipes on my blog, I think I’ve accomplished that.

Fried Okra in Red Palm Oil is one of my favorite recipes in AIP Paleo Cajun Cookbook. To celebrate my six month anniversary of it’s release, I would love to share the recipe with y’all. If you’ve never tried okra before, this recipe is a great way to try it for the first time.
Ingredients
- 1/2 pound okra, sliced
- 1/2 cup tapioca or arrowroot starch
- 1 teaspoon garlic powder
- 1/2 teaspoon sea salt
- 2 tablespoons red palm oil
Instructions
- Place first 4 ingredients into large bowl or resealable bag.
- Mix well, coating okra with dry ingredients.
- Set in fridge for 10 minutes.
- Heat red palm oil in large fry pan, over medium heat.
- Once oil is hot, drop in coated okra.
- Stir to keep from burning. You may have to cook in two batches.
- Fry for about 5 minutes per batch, or until okra is lightly browned.
- Remove from oil and place on paper towels to drain.
- Serve immediately.
Notes
Be sure to serve immediately. Does not store well.
