Y’all know how much I love one skillet meals! Well, this week’s recipe is one of my favorites, Breakfast Sausage & Sweet Potato Skillet Recipe.

I usually order my sugar free breakfast sausage from Door To Door Organics- Chicago. It’s crafted by a small, local, organic farm. If you can’t find sugar free sausage, you can make your own. Bre’anna has an awesome recipe in her cookbook, He Won’t Know It’s Paleo. Or, you can use ground pork instead.
Ingredients
- 1 pound sugar free, AIP approved, breakfast sausage
- 1/2 red onion, chopped (about 1/2 cup)
- 2 small sweet potatoes, peeled and cut into small cubes
- 1/2 cup chicken or bone broth
- 1 cup sauerkraut, drained
- 1/2 avocado (optional), for garnish
- Cilantro leaves (optional), for garnish
- salt, to taste
Instructions
- Brown breakfast sausage in large skillet over medium heat.
- When sausage is almost cooked through (about 5 minutes), add red onion.
- Stir and cook for 4 minutes.
- Add sweet potatoes and stir.
- Cook for 5 minutes, stirring often.
- Add broth and lower heat to medium/low.
- Cook until sweet potatoes are cooked through and all liquid has been absorbed (about 15 minutes).
- Add sauerkraut and stir.
- Cook for 3 minutes.
- Remove from heat.
- Serve and add garnish and salt to taste.
This Breakfast Sausage & Sweet Potato Skillet Recipe is a great go-to batch cooking recipe, too. I usually can get two to three servings out of it. Of course, I tend to eat large servings; so, you could probably get more. It can be refrigerated or frozen.

I know I seem to go on and on about the importance of batch cooking. I only do it because I think it’s one of the best things you can do to ensure your success on the AIP.
